Chestnuts are smoother. Water chestnuts are crunchy and have, you got it, a higher water content.

If you mean applications, water chestnuts are usually in stir fries, maybe salads. Chestnuts make stuffings, one kind of catsup, soups, purees, they go into baked goods.

You can't roast water chestnut's on a open fire...They keep putting the fire out !!! lol
