Durkee used to have a dry spice called "Charcoal Seasoning". It was a black, salty type rub and hasn't been on the market for a long time. Each inquiry to the company is a "cookie cutter" customer service response saying they dont make it any more. Anyone know what might have happened to this, know how to make it? Thanks!

My silicon Bakeware burns my buns!?

Ok not buns but bread. I use an upper rack on the oven but not the topmost rack because I am afraid that the bread will rise too much and stick to the top of my oven. Do you think that a metal baking sheet under the loaf pan would help? And if it would help should I put it directly under it or on the lower rack. Any advice will help thanks!

What is a good beginner cookbook that also has healthy/easy recipes?

I want to start cooking but every time I look for recipes they either need a bunch of ingredients or they seem too overwhelming. Can spiced beef be made without saltpetre? Does it need soaking in brine before spicing?

I want to make spiced beef but cant get hold of saltpetre, is it possible to leave this ingredient out and does it need to be soaked in brine before being spiced?
