got a growing kid who's appetite seems to be growing each day... it doesn't have to be simple but can be and i don't mind putting the time to prepare the meal, but if my kid likes it, i will be one sane dad... no mac and cheese dishes, okay.... thanks

Here's the deal . . . I have minimal fridge (mini-fridge) space, and only a microwave to cook with so I need meal ideas (for one) that need no cooking or microwave cooking and require few ingredients but are still, yummy, healthful, and quick.

I smoked a 10 lb. brisket for 13 hours the other day. Everyone loved the flavor, but to me it was tougher than what I like my meat. I am comparing it to tri-tip and wondering will slowcooking a brisket ever make it that tender?
