split the backs - kitchen shears work best for this
Make sure water is boiling before you put the shrimp in
only boil till just turned pink
pull out with a large slotted spoon (or a big mesh strainer)
plunge into ice water right away
Some people say brining the shrimp first works but I haven't tried it yet

Bring about 4 gallons of water (yes, I'm serious 4 gallons) to a rolling boil with your seasoning ingredients.
put in shrimp and boil for about 3 minutes no longer. Just until they turn red.
put cooked shrimp on ice immediately.
Overcooked shrimp tend to stick to the shell, so be careful.
To peel, take off the bottom (where the legs are),
hold the shrimp with one thumb on either edge of the lower part of the shell and press outward. the shell should pop right off.

Before you cook them, they should be scored. If you don't know how to do that, it's okay too.
Next, you want to start with COLD tap water, and add about a tablespoon of salt to it. Boil the water BEFORE putting in the shrimp. Drop those babies in and in about 5 to 8 minutes, you will have perfectly boilt (boiled) shrimps that pop right out of the shell! Take care and enjoy.

You want to boil them just until they turn pink and they start to float and then put them on ice if you want them cold. They should peel very easy. The only time shrimp doesn't peel easily is when it has been cooked to long.

The boiling part is basic, you need to cut the back of the shell with scissors before the boiling process, that get the water between the shell and flesh

I have found that it is more a matter of the shell thickness then the cooking technique. The thicker shells seem to come off easier on raw as well as cooked shrimps
Try to put some salt in the water and see if that helps.

I always just add a bit of olive oil to the water and make sure to run it under cold water when it's finished draining. It helps
