For flavoring, you'll want to use "traditional" mexican flavors. Oregeno (mexican if you can get it) a little cumin, and chiles (milder ones or hotter ones depending on your preference), onion, and garlic (not too much).

This comes out MILD
2 or more chicken breasts
1/2 c. to 1c. chicken broth
(I use 1/2 c when I slow cook and a full cup when I boil)
1 onion quartered
2 cloves of garlic (maybe just cut in half)
handful of cilantro
boil or slow cook (cover tightly & boil 30 min - slow cook 4 -8 hours)
Remove all veggies and shred chicken
From here you can either serve or add some extra stuff for more flavoring: green chilies and diced onion w/ chopped cilantro, salt and pepper if desired
very good & easy, no seasoning packet required!

Homeade Taco Seasoning
1 1/2 teaspoons paprika
1 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon salt or garlic salt

You could always buy a Mexican seasoning mix from the spice aisle of your supermarket; however, marinating the chicken will leave you with a better flavor and juicy meat.
For two chicken breasts:
Try a marinade of 1/4 cup of tequila, 1/4 cup of lime juice, 1/4 cup of olive oil, 2 teaspoons of ground cumin, 2 tablespoons of minced cilantro, 1 teaspoon of sea salt, and a pinch of ground cayenne pepper. Marinate for a couple of hours before grilling.

Chicken powder, sauteed chopped garlic, ground cumin, diced green chilies, oregano. cilantro, black pepper and fire roasted canned (or fresh ) tomatoes.
If you want a smokey bold flavor put 1 diced chipotle pepper.
For a sharp and spicy add a seeded minced fresh Jalapeno.
Top with cotija cheese

ps white corn tortilla rock for this. no fry just heat in pan or oven.
