Italian Chicken and Vegetables
Ingredients:
4 small (4 ounce) boneless, skinless chicken breasts
1/2 cup fat-free Italian salad dressing
1/4 cup water
1/2 teaspoon Italian seasoning
1/2 pound fresh mushrooms, sliced (approx. 3 cups sliced)
2 Roma or plum tomatoes, diced
1 large carrot, julienne cut
1 small Italian zucchini, sliced
3 green onions, sliced
Spray a large skillet with nonstick cooking spray and heat over medium heat. Add chicken and cook until browned on both sides. Remove and set aside.
Add Italian salad dressing, Italian seasoning and water and heat over medium heat. Add mushrooms and cook about 4 minutes, stirring frequently. Stir in tomatoes, carrot and zucchini. Place chicken breasts on top of vegetable mixture. Reduce heat, cover and simmer until chicken is done, about 10 minutes.
Remove chicken and vegetables and cook sauce over high heat, stirring constantly until reduced, about 2 minutes. Sprinkle with green onions and serve over chicken and vegetables.
Makes 4 Servings

This is very easy and my stepdaughter (aka **The Food Critic**) even liked it!
JUBILANT CHICKEN
Prep time: 15 min.
Baking time: 1 1/4 hours
Oven temp: 325°
1 frying chicken, 3 - 3 1/2 lbs, cut up
1 tsp salt
1/4 tsp pepper
1/2 c butter, melted
1/2 c chili sauce ( I used ketchup and added a bit of chili powder)
1/2 bottle (8 oz) sweet and sour sauce
1 green pepper, sliced thin
1 medium onion, cut into rings
8 oz. canned peaches, drained (I omitted these)
Place chicken skin side up in a lightly oiled baking pan. Sprinkle with salt and pour the melted butter over the chicken.
Bake at 325° for about 30 min., or until browned. Meanwhile combine the sauces.
Pour the sauces over the chicken and top with remaining ingredients. Bake for 45 min. longer, until chicken is cooked through.
Recipe can be halved or doubled.

There's so many other things to make! Go to a web site like allrecipes.com for ideas. Learn how to cook by nationality. Learn italian, mexican, chinese, etc. Or just go to the store, buy some boneless chicken breast, buy a whole chicken roast, buy some thighs and drumsticks, some sweet italian sausage, some kielbasa, some steaks like rib-eye or ny strip steak, some flounder or salmon, and look up some recipes!!! Ground beef is actually one of the worst for you, you need to add more meat that is good for you to your diet.

You can use ground pork to make meatballs; you can use ground chicken to make chicken style meatballs; you can have pork chops - grilled or breaded; pork tenderloin; baked chicken; grilled chicken; grilled turkey breasts; turkey burgers - the possibilities are endless!
You can make a variety of sides, too; rice pilaf, garlic mashed potatoes, macaroni and cheese; grilled asparagus, tossed green salad, et al.

You could try Wiener Schnitzel ... or the same treatment as those but with chicken cutlets, beaten fine ..... serve with green salad, hot German potato salad, some crusty rolls (baps .... see the Glasgow, Scotland site for a recipe), and fresh lemon ...(Wiener schnitzel: see: www.aboutvienna.org for recipe)
Wait 1/2 hour and then serve dessert and tea or coffee .... for dessert: you could make those little Viennese vanilla crescent cookies that are made with crushed walnuts ... super-easy and really good .... (see site recommended above ... called Vanilla Kipferl)
Cheers!
