Pasta Fritatta
Ingredients:
8 ounces spaghetti
1/2 cup sun-dried tomatoes packed in oil, drained and chopped
4 large eggs
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
3/4 cup parmesan cheese, grated
3/4 cup Fontina cheese, grated
1 tablespoon butter
1 tablespoon extra virgin olive oil
Ahead of time: Cook spaghetti in a large pot of boiling salted water until tender, but not too soft, about 8 minutes. Drain. Toss with sundried tomatoes and set aside to cool.
When the pasta is cool: In a large bowl, whisk the eggs, salt, pepper, parmesan and fontina cheese to blend.
Add the pasta and toss to coat.
Melt butter and oil in a 9 1/2 inch nonstick skillet over medium heat.
Transfer pasta mixture to the skillet, pressing to form an even layer. Cook until the bottom is golden brown, about 3 minutes.
Place skillet under broiler and broil until top is golden brown, about 5 minutes.
Cool to room temperature, then invert the fritatta onto a platter and cut into wedges.

Baked boneless, skinless chicken breasts, or pork chops, or fish fillets. Place meat in a pan, such as a cake pan. Top it with any or all of the following: fresh sliced (or canned) mushrooms, onion rings, sliced peppers, or use your imagination! Mix together a chicken boullion cube dissolved in 1/2 cup hot water, and 1/2 to 3/4 cup wine (any kind you want). Pour liquid over chicken & veggies. Cover with aluminum foil and bake at 350 for about an hour or until meat is thoroughly cooked and veggies are tender. Baste occasionally during baking. You can bake it for a little less time at 375 degrees, especially if making the potato side dish (below).
Easy oven-roasted potatoes: Line a cookie sheet with aluminum foil and spray it with non-stick spray. Place peeled or unpeeled potato wedges single layer on the foil. Spray potatoes with non-stick spray and sprinkle seasoning on them - I use Laury's seasoned salt and garlic salt. Bake along with meat recipe, above, but not quite as long.

I always go for spaghetti. Almost everyone likes it, the noodles boil up quickly, sauce from a jar takes no time and meatballs are start to finish about 15 minutes. With a bagged salad and premade garlic bread dinner's on the table in half an hour and it makes an impressive spread. Good luck, and have a great day!

Peppered Flank Steak
Balsamic vinegar and lemon juice help tenderize this less-tender cut of beef and add flavor. After cooking, slice the steak immediately across the grain into thin strips.
1 (1 1/2-pound) lean flank steak
1 teaspoon cracked or freshly ground pepper
1 teaspoon bottled minced garlic
1/4 teaspoon salt
1 teaspoon olive oil
1 tablespoon balsamic vinegar
2 tablespoons fresh lemon juice
Trim fat from steak. Rub steak with pepper, garlic, and salt.
Heat oil in a large skillet over medium-high heat. Add steak; cook 6 minutes on each side or until steak is desired degree of doneness, basting with vinegar.
Cut steak across grain into thin slices. Drizzle lemon juice over steak.
Yield: 6 servings (serving size: 3 ounces)

My fiancee constantly has family participants passing by city so I constantly make goulash. (don't comprehend if I spelled it properly.) some people call it Marzetti. only floor beef or chuck, some prego sauce, eco-friendly pepper, onion and combine with macaroni. this might pass a protracted way and that's good. Sprinkle with some parmesan or Romano cheese. With a superb salad and a few garlic or crusty bread. Fruit salad for dessert. to save greater money used canned fruit as clean can now and returned be costly.

Meanwhile, you cook the penne to al dente, drain rinse. Now throw that in and gently toss, and put it in a large serving dish and top with fresh tomatoes and serve with Parmesan cheese. Fresh, healthy and delicious.

Lasagna! Here's my personal recipe:
-1 1/2 kilos ground beef
-pre-cooked lasagna pasta
-pre-made "basilica" tomato sauce or other red sauce you prefer
-100 grams ricotta cheese
-100 grams mozzarella cheese
-Salt to taste
-Oregano to taste
-Garlic or garlic salt to taste
-Brown the beef in a frying pan; add spices while cooking.
-Lay the first layer of lasagna flat in a rectangular pan (glass is preferred); lay the browned beef on top.
-On top of the layer of beef, add ricotta in "spots" and a thin layer of mozzarella.
Repeat the last two steps for another layer.
Bon appetit!
