Hi all im looking for a recipe for good sothern fried chicken also spicy fried chicken

For spicy add 2Tbs of Creole seasoning to you flour
Southern Fried Chicken

INGREDIENTS:
2 frying chickens, about 2 1/2 to 3 pounds each, cut into serving pieces
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup milk
vegetable shortening for frying
1 tablespoon bacon drippings

PREPARATION:
Wash chicken and pat dry.
In a heavy brown paper bag or large food storage bag, combine the flour and salt and pepper; shake to blend well. Pour the milk into a wide shallow bowl.

Heat 2 to 3 inches of shortening in a deep heavy skillet over medium heat, or electric fry pan set at 375° F.

Add the bacon grease. When a drop of water spatters when it hits the hot oil, dip some of the chicken pieces into the milk then place in the bag and shake to coat evenly. Arrange the chicken pieces in the fat, making sure not to overcrowd. Fry the chicken until outside is golden brown and crisp, about 15 to 20 minutes, turning once to brown both sides. Reduce heat to 350° F and fry until cooked through golden brown, about 15 minutes longer. Turn once. Drain chicken on brown paper or paper towels, adding a little more shortening and bacon grease if necessary, setting or regulating the temperature as for the first batch.
Transfer the chicken to a large platter for serving.
Serves 8.

Southern Fried Chicken Recipe


3 eggs
1 cup hot red pepper sauce
2 cups self-rising flour
2 1/2 pound chicken, cut into pieces
House Seasoning, recipe follows
Oil, for frying, preferably peanut oil


Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
In a medium size bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 1 cup). Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. Approximate cooking time is 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

Oven Fried Pecan Cornmeal Chicken

Ingredients:

2 pounds chicken breast
1 cup vegetable oil
3 tablespoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 cup finely ground pecans
1/2 cup yellow cornmeal

Preparation:

Heat the oven to 400 degrees. Pour 1/2 cup of the oil into a 9x13-inch baking dish and heat it in the hot oven for 10 minutes. Pound the chicken breast halves to an even thickness.

Combine the remaining oil with the mustard, salt, pepper and paprika in a shallow bowl and mix well.

Combine the pecans and cornmeal on a sheet of wax paper. Dip the chicken pieces in the seasoned oil and then in the nut mixture.

Remove the pan from the oven and place the chicken pieces in the pan. Bake for 10 minutes, then turn with tongs and bake for an additional 15 minutes. Drain on paper towels and serve immediately.

My fried chicken tastes like you are in the South eating it and I live in Minnesota.
I soak my clean chicken pieces in buttermilk and let them marinade for quite a while. (at least a couple hours).
I use a ziploc bag and just flour and Tony Cacheres creole seasoning (2 cups flour and 3 tbsp seasoning ratio). Kinda of like shake and bake, it is less mess.
Make sure your oil is fresh and HOT to 375 when you start because it cools down once you start adding your pieces of bird. Fry your pieces til they are brown.
I place mine in a 9 x 13 pan and finish it in the oven so some of the oil drips away. Lightly salt your chicken when it comes out of oil and before it goes in oven.
I also do this with my chicken strips and my chicken wings but I skip the oven process then because they cook faster.

wash and season the chicken pieces with seasoned salt, garlic powder, pepper, and powdered cayenne pepper. roll the chicken pieces in flour and set them on a plate. sit the chicken in the fridge for an hour. in a BIG pot, deep cast iron skillet OR deep fryer, fill it up halfway with cooking oil (vegetable or canola). let the oil get VERY HOT, and carefully put your chicken in the oil. let the chicken cook on medium high heat for about 25 minutes, (turning halfway through) depending the size of the pieces. when it's done the juices should run clear. take the chicken out when done and drain it on a paper towel. let it cool for 10-15 minutes. enjoy!
