I've recently switched to grass-fed cow for it's greater health benefits. I know this contains less fat than the corn-fed, thus less marbling - and I have noticed that once cooked (we typically grill) that it becomes very tough. The taste is still great, but cutting it is like sawing into concrete.

Any tips for preparing grass-fed steak so it stays tender?
