Dip them in egg and breadcrumbs and fry in veggie oil. Drain them on a paper towel before serving. Kids love this dish.

Chicken Savannah
8 boneless, skinless chicken breasts
8 slices cheese
1 can cream of mushroom soup
1/4 C dry white wine
1 cup seasoned stuffing mix, crushed
2 to 3 T butter, melted
parsley (optional)

Arrange chicken in a lightly greased 9 x 13 baking dish. Top
with cheese slices. Combine soup and wine; stir well. Spoon
sauce over chicken; sprinkle with the stuffing mix. Drizzle
butter over crumbs; bake at 350 degrees for 45 minutes. Garnish
with parsley.

CHICKEN PARMESAN
4-6 chicken breasts
3 eggs plus 1 tablespoon water, beaten
1 1/2 cups breadcrumbs plus 1/3 cup grated parmesan cheese
1 jar favorite spaghetti or maranara sauce
Sliced Mozarella cheese

Place each breast between two pieces of saran wrap and pound thin using a meat hammer, rolling pin or a heavy can. Heat two tablespoons of oil in a skillet. Dip breast in the mixture of breadcrumbs and parmesan, into the egg wash and into the breadcrumbs again. Place in skillet and brown on each side, 2 to three minutes. Place in baking dish and cover with maranara sauce. Bake at 350 degrees for 30-45 minutes until chicken is cooked through. Place mozarella slices over breasts. Place under broiler 5-7 minutes until cheese is melted and bubbly and lightly browned.

Pound out the chicken breasts...cut each into about 3-4 "chicken fingers".
Dip the chicken FIRST in flour
SECOND in 1 egg mixed with a little milk
3rd in bread crumbs
Fry in a shallow ammount of oil in frying pan on a high heat...but only about 3 at a time so they cook crispy! Thats the trick! Each side should take about 4 minutes.
Instant Chicken Fingers! Pounding them out gurantees even cooking. Dip in Spaghetti sauce or ketchup.

Take the potatoes and slice them however you like
Mix with Italian sald dressing...if none use olive oil and spices...
Place potatoes in an 8x8 or 13x9 baking dish (line with foil for easy clean up)
Bake at 400 for 40 minutes top with cheese if you have any at the end.

She should love it! :) Best of luck to you!

Marinate your chicken breasts in Italian dressing overnight if you have the time, but if you don't, then marinate for at least an hour or so. You can cut to size and make your own "chicken fingers" that little ones like to eat. Take your breadcrumbs and mix with parmesan cheese. Roll marinated chicken in the crumbs and put in an oven at 375 degrees until cooked through. Serve with a Ranch Dressing and carrots and celery.

Season with salt and thyme. Pan fry (saute). Cook both sides until center no longer pink. Cut up onions and cook until soft in the pan where the chicken was (if kids don't eat onions, just spoon the sauce around at serving time). Pour in 2 tbsps of balsamic vinegar and about 1/3 cup of rapsberry jam (seedless). Combine until jam is smooth. Add additional water if desired. To serve, spoon over the chicken. The whole process should take no more than 30 minutes!!!!

What about my special grilled chicken?
salt and pepper it and then marinate it for 30 mins with fresh (or dried, preferably fresh) thyme and rosemary and some peppercorns
Then grill it with the skin facing down to make it crispy and turn round at middle of the cooking time. For one whole chicken it may take 20 to 30 mins depending on your grill.

If you have some tomatoes (about one per person) you can make a good sauce by taking whole tomatoes, taking the core out with a simple knife, then grill them together with the chicken until they start becoming soft. Take them out and chop all of them but one into pieces and saute them with chopped garlic and onion for 2 or 3 mins. (about 2 garlic gloves will do and one medium or big onion will be fine too) then put all this mixture in the blender, add a little bit more of oil, a little bit of white wine if you have and if you have some vegetable broth/stock you can add it too. Then take everything back to the pan and reheat, and add the remaining tomatoe chopped in small pieces. This technique will give a smoky flavor to the tomatoes, like baked tomatoes, and the remaining tomatoe sliced in cubes, will add a nice texture to the sauce.

to serve, put sauce on the plate, place the chicken and then more sauce on top of it.

My two kids eat this and you can also make mashed potatoes to compliment

Teriaki chicken or barbecue chicken cut into cubes is the easiest. Then make some mashed potatoes on the side. I would say make some chicken and dumplings with the reams frozen dumplings but then you have to go to the store and get chicken broth and dumplings. Kids love that though...

something very easy and kids love (and adults cuz very flavorful)
Is throw the chicken breast in a pyrex dish... then add unitl covering the breasts Krafts Zesty Italian dressing (I like Kraft because it has a lot more flavor than lets say wishbone dressing).
Then cook at 375 for 15 mins on each side (flip the breats)
This is great taste's like you marinated the chicken for hours when you just threw it on right before the oven.
Or you can always slap some BBQ sauce on and cook, kids like that.

Or you can cut kind of oddly shaped peices, bread and bake them- make healthier chicken nuggets and serve with their fav dipping sauce.
