i want the recipee of nimbu chicken... usually served in the hotels.

Lemon chicken Recipe

500g chicken
3 teaspoon peanut oil
1 onion, sliced
2 cloves garlic
1/2 teaspoon sliced ginger
Juice and zest of 2 lemons
2 tablespoon soy sauce
1 bouquet garni, or tablespoon mixed herbs
1 pincf cinnamon
1 pinch powdered ginger
Salt & pepper

Dice the meat.heat the oil in a casserole dish and brown the onion, garlic and ginger for 3 or 4 minutes.Add the meat and sauté for a further 2 minutes or until golden.Add lemon juice, soy sauce and 150ml water.Add the bouquet garni or mixed herbs, cinnamon, powdered and sliced ginger and lemon zest.
Season and simmer for 45 minutes over low heat.

Preserved Lemon Achar (Nimbu Achar) Recipe:

Ingredients
25 medium-sized ripe nimbu (lemons)
1 teaspoon turmeric
1/2 cup salt
1/2 cup red chili powder
1 teaspoon fenugreek seeds
20 garlic cloves, peeled
15 ripe lemons, juiced

Instructions
Cut each lemon into four pieces, and mix with salt, turmeric and lemon juice. Mix well and keep aside in a plastic container. Mix once every day for three days. On fourth day, add chili powder and lightly crushed garlic. Heat the fenugreek seeds, grind into a powder and add to the above. Mix well. Put a little sauce into your mouth, and if a lot water comes into the mouth, then the salt is enough. Otherwise add a little bit. If you don't eat a lot of salt, you can always store in the refrigerator.

Nimbu Chicken (Chicken in Coconut Milk)

Ingredients:
8 Pepper corns (Kalimirchi)
6 Coriander Roots (Dhania)
3 cms thinly sliced Ginger (Adrak)
625 ml Coconut milk
2 thinly sliced Green chilli (Hari mirch)
1 Lime Peel
4 shredded Lime Leaves (Nimbu Ke Patte)
1 kg cut into 8 pieces Chicken
1 tblsp Fish Sauce
3 tblsp Lime Juice (Nimbu Ka Raas)
3 tblsp chopped Coriander (Dhania)
To taste Salt (Namak)

How to make chicken in cocount milk top:
Beat peppercorns, coriander roots and ginger together.
Heat peppercorn mixture in a wok.
Stir in chillies, coconut milk, lime peel and leaves.
Heat to simmering point.
Mix the chicken pieces.
Cook over medium heat till the chicken is tender and liquid is reduced, it will take about 40 to 45 minutes.
Mix fish sauce, salt and lime juice.
Garnished with coriander leaves.
Serve hot.

i great, quick way is to simply buy one of those rotisserie chickens from your local store. Then simply pull the meat from the bone, discard the gristle and you are ready to use it. My local King soopers sometimes carries pulled/shredded chicken in the deli counter. You should never boil chicken... poach it I mean. It just leaches the flavor into the water. a better way is to buy bone in, or boneless chicken breast and simply roast them in the oven. I will spray them lightly with an olive oil cooking spray and then season with salt and pepper and then roast them 15 or 20 minutes (in that general area for time) then I let them cook and shred the chicken you can go a bit fancy and season the chicken ahead of time. Maybe some good cumin. Maybe sprinkle with fresh lime juice before baking. I would say sometimes a dash of smoked paprika or a good ancho chili powder. Something that compliments the enchiladas you will eventually put the chicken into. But if anything, a plain simple roasted chicken breast that you do yourself, and then shred will probably be your best bet

add nimbu to your dish, try potatoes
