Its marinated, covered with pineapples, and covered with foil. Should i roast it slower, hotter, longer, or am i good?

By the time i got any answers i finished making my meal and my meat thermometer says it was way more than okay.

And don't worry chef about the connective tissues and collagen, this prok is gonna be chopped to hell for taco meat, all of that stuff adds flavor, besides i think alot of it broke down because the liquid level in the roasting pan was several inches higher than when i started.

well a shoulder cut is going to be tough when roasted due to the high ammount of collagen and connective tissue.. typically braised or stewed to break down the collagen..
Roast it at 300 for until the internal temp is about 130 then 400 with the cover off till 155 degrees
