i dont like mine crispy, i like it kinda chewy better, to me if i can grab a piece at the ends and it just snaps its way overdone, i like it just done enough so you can fold a piece in half to put on a sandwich without it breaking. and i also cook it in the microwave between paper towels, so much less mess that way. how do you make yours? and who else thinks that maple flavored bacon really sucks.

After fermenting in a crock for 4 weeks, we are going to can 50 pounds of kraut in quart jars. We know how long to water bath it, but the question is do I use the liquid in the crock or drain the sauerkraut and use fresh water?

At a wedding reception place we were served a lovely garden salad. The garnish on top was long curled strands of carrot and beetroot. What is the name of the utensil/machine used to make this.

Should I peel mushrooms? I mean when they get a bit old - still edible, but a bit battered. I never have but then I'm a culinary slattern. The way I see it is they're going to be cooked so who's to know? What do you do?

And, no, I don't mean magic mushrooms you little tinkers.

I've just heard on a TV programme that this is a traditional Polish recipe but have no other details. Sounds yummy though so it would be great to try it out.
