You can set the temperature of the oven to around 80 deg.
celcius to keep the baked potatoes safely warm until you're
ready to serve it.

most ovens have a 'warm setting' which will keep something warm enough til it's serving time without overcooking it. if not just use the lowest setting you have.
also many ovens that have a 'warming drawer' are designed to do exactly what you're doing. when you set the oven to 'warm' the heat only goes into the drawer below the oven. you can put the potatos on a piece of foil or something and keep them warm til it's serving time.

I find it easier to micro the potato first, until 1/2 or 3/4 done,
then finish it in the oven when I need it.
works great.
(or the grill can be used to finish it)

As long as it is in the oven, it's continuing to cook. I recommend removing the potato and wrapping it in heavy duty aluminum foil, where it should stay at the same temperature for at least 45 minutes.
It has always worked for me.
