At a wedding reception place we were served a lovely garden salad. The garnish on top was long curled strands of carrot and beetroot. What is the name of the utensil/machine used to make this.

hi there this device is a japanese mandolin you can find it most catering shops,be sure to ask for the japanese one as there is a normal one that just does slicing the japanese one does the curls.

It is a plastic 'spiral' veggie cutter. Cost is minimal, check out
your local kitchen gadget store or on line.

I've even seen them in my local dollar store.

The cheap ones are just as good as the ex pensive, plus it's not
used that often.
