Ummm, Taco Johns is a very specific kind of taco meat...a generic 'taco meat' seasoning mix won't do. I dated someone who worked at a TJ's when I was in high school (again, many, many moons ago!!) and he told me that the corporate office sent them bags of the seasoning so he didn't know what was in it.
The only thing I can offer you is a way to get the meat to the right consistency. That would be to SOAK your ground beef in water for 2-3 hours, then cook it in a bit of shortening, mashing it well with a fork the entire time it cooks...I'm assuming you probably cook it with some very finely chopped onions as well.
Now if we could get someone to actually give us the spices, we could make us some Taco Burgers w/ Sour Cream!! MMMMMMMMM. Did you know the seasoning on the Potatoe Ole's is simply Lawry's Seasoned Salt? Buy some processed cheese dip and I'm back in the midwest again!! I've since moved to New England and their idea of decent Mexican fast food is Taco Bell! It sooooo pales in comparrison. I need a TJ's fix NOW!
Anyway, sorry I couldn't give you the answer but I'm saving your post in the dire hope that someone can provide the actual seasonings they use in the meat so I can make it too. Thanks for the post!!

Taco Seasoning Mix
2 teaspoons chili powder
1 1/2 teaspoons dried minced onion
1 1/4 teaspoons salt
1 teaspoon paprika
3/4 teaspoon crushed beef bouillon cube
1/2 teaspoon splenda
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Combine all of the ingredients in a small bowl.
Prepare taco meat using 1 pound of ground beef.
BROWN ground beef; drain. Add seasoning mix and 3/4 cup of water. Bring to a boil; reduce heat. Simmer uncovered, 10 minutes, stirring occasionally.
SERVE bowls of seasoned ground beef, lettuce, tomato, cheese and sour cream.

First of all, Taco John's meat seasoning itself does not have minced/diced onions in it. They add diced onions to the meat before they cook it. Secondly, the seasoning for the potato's ole's is not put on until after they come out of the fryer so...

Shake some Louisiana Cajun Seasoning on the taters. It tastes so close to the Ole seasoning that you wouldn t tell the difference in a side by side comparison. It s packaged in an orange can, and costs about 3 bucks at the supermarket.

hey.... when i do my ground beef i used a package of hot taco seasoning mix, or franks red hot sauce, i also add about half a teaspoon of curry powder, chopped garlic,and chopped onion for more flavour.....

You start by cooking 1# beef with 1/2 cup dried onions, that is all. Not in a fry pan, but in a kettle with 3/4 cup water to 1 cup. Add water as it is cooking IF it is too dry. As it is cooking, take a potato masher to it and mash it up fine. Keep doing this as it cooks.
The original bag of seasoning had pellets of soy, which may or may not be necessary, I am still working on the seasoning mixture.
