Waffles

1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 egg
1/2 cup granulated sugar
1 tablespoon granulated sugar
2 tablespoons butter, softened
2 tablespoons shortening
1/2 cup half-and-half
1/2 cup milk
1/4 cup buttermilk
1/4 teaspoon vanilla

Combine flour, salt and baking soda in a medium bowl and stir to combine.
Lightly beat the egg in another medium bowl and combine with sugar, butter, and shortening, mixing well until smooth.
Add the half & half, milk, buttermilk and vanilla and mix well.
Add the dry flour mixture to the wet mixture while beating and mix until smooth.
If you can, cover and chill overnight, though the batter can be used right away.
Rub a light coating of vegetable oil on a waffle iron, and preheat it.
Leave the batter out of the refrigerator to warm up a bit as your waffle iron is preheating.
Spoon 1/3 to 1/2 cup of batter into the waffle iron and cook for 3 to 4 minutes or until the waffles are light brown.

Sour Cream Belgian Waffles

1/4 cup butter, melted
1 cup milk
1 1/2 teaspoon vanilla
1 cup sour cream
2 eggs
2 tablespoons sugar
1 1/2 cup flour
1 tablespoon baking powder


Directions:

Mix butter, milk, vanilla, sugar, eggs and sour cream with a fork. Add dry ingredients gradually. Use 3/4 cup for a 7" waffle. These turn out very light.

This Sour Cream Belgian Waffle is yeast free and easy to make. I converted it from a regular recipe. No need to rise. Use immediately or leave in refrigerator overnight.

In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.

Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

A few tips before the recipe

Butter and milk give waffles a darker color and bolder flavor than if you use water in their place in the recipes. You can use water in any of the recipes if you have a milk allergy. Use low fat or non-fat milk.. You can also just use the egg whites and use oil instead of butter if you want to cut down on cholesterol.

Ginger Waffles:

2 cups of flour
2 or 3 Eggs
1 1/2 cups of milk or buttermilk
1 tablespoon fresh ground ginger or 1 tsp. of dry ground ginger
1 tsp. cinnamon
4 oz applesauce
1 tsp. baking powder (powder reacts with heat, baking soda reacts with acids)
1/2 tsp. salt
If you like sugar in your waffles, add a few tablespoons of molasses
3 to 8 tablespoons of cooking oil or butter

Combine thhe ingredients and allow to rest for atleast 5 mts before spooning inot the waffle maker.

Waffles
This makes one waffle or two pancakes but can easily be increased. Beating the egg whites makes the whole wheat waffle light & fluffy.

2 tablespoons powdered milk
2 tablespoons water
1 egg, separated
1/4 cup whole-wheat flour
1/8 teaspoon baking soda


Beat egg white until stiff.
Set aside.
In a separate bowl, wisk together water and powdered milk.
Add egg yolk.
Add flour and baking soda.
Fold in egg whites.
Bake according to waffle iron directions.

If you don't have buttermilk.....you can make a substite for it, I've had to have many times.

Buttermilk: 1 tablespoon of lemon juice or white vinegar plus enough milk to make 1 cup equals 1 cup of buttermilk

Chocolate Chip Waffles:

You can serve these plain or topped with vanilla ice cream and chocolate minichips.

Cooking spray
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups fat-free milk
1 tablespoon butter, melted
1 teaspoon vanilla extract
1 large egg yolk
1 large egg white
1 tablespoon sugar
1/2 cup semisweet chocolate minichips

Coat a waffle iron with cooking spray, and preheat.

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in a large bowl. Place milk, butter, vanilla, and egg yolk in a bowl; stir with a whisk. Add to flour mixture, stirring until blended. Beat egg white and sugar with a mixer at high speed until stiff peaks form. Fold into flour mixture. Fold in minichips.

Spoon about 1/2 cup batter onto hot waffle iron, spreading batter to edges. Cook 3 to 5 minutes or until done; repeat procedure with remaining batter.

Yield: 6 servings (serving size: 1 waffle)
