Whenever I bread my chicken breasts or pork chops and cook them on the fry pan, I always burn them. How do I prevent this? It's driving me crazy!!!

I am cooking spaghetti with white clam sauce tonight. The recipe calls for two tablespoons of chopped fresh parsley, but I was wondering if I could substitute dried parsley. I don't cook very often, and I certainly don't use parsley often when I do cook, so I thought dried parsley would be the better choice, since it won't go bad. Will that ruin the recipe, though?

I have this breaded, but uncooked bag of chicken wings. Before i cook them in the oven, they look normal, but after I cook them up, a brownish/black liquid comes out of them. Ive eaten them before and none of us got sick, and it happens everytime we cook them. Is it bad that this happens? Or is it just something that happens when cooking raw chicken? Im a college student, so im no cooking pro. And no, the chicken is not expired (checked that right away before we ate).

I'm making a homemade veggie soup right now and trying to empty my pantry. So far I have in the pot: garlic, beef broth, corn, green beans, tomatoes, celery, red potatoes & onion, along with some seasonings. I have a can of Cream of Mushroom soup that I could throw in toward the end but wondered what that would do to the soup I'm making. Plus, I want to freeze smaller portions and didn't know how it would effect that as well. Any help would be great!

For dinner tonight, I was thinking about doing Mahi Mahi (tropical fish) encrusted with coconut and macadamia in an orange juice glace - baked. I have a salsa to serve it with out of mandarin orange, marmalade, red peppers, green chiles, and lime juice.

I thought about serving this with steamed green beans with toasted almonds, and some wild rice,

I am not so sure about my side dish choices - what do you think?

I am making a beef soup and I have always used fresh cilantro in it, but I bought some dried cilantro leaves and was wondering if you think it will work as well and give it the same cilantro flavor? I also just ran out of my fresh cilantro but if you think it will not be as good I will just go get more, but if it is good I would like to start using it in more of my cooking(it also saves me the chopping time.) Any help would be great. Thanks!
