Old-Fashioned a.k.a. Basic Meatloaf
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Using dry oatmeal in the mix is better and healthier than bread crumbs...also try adding a bit of Italian sausage in the mix for a spicier flavoured meatloaf

If you must use "Minute Oatmeal" Regular oatmeal takes too long to soften when substituting in a recipe. There are great recipes that use regular rolled oats however.

yes, it can be done, all dried oatmeal does is to absorb the water in the ground meat, go slowly too much causes the finished product to burn easily. do not use all-ready cooked oatmeal, its too mushy. there are lots of recipes in commercial cookbooks that will show you the way. be generous with the spices and other ingredients

naaaa it would be pretty gooey!!!! if you dont have bread crumbs... take a few pieces of bread put them in the oven on very low heat... to dry them out ... and crunch them up and you have bread crumbs
