No matter what you use, there are probably unhealthy aspects to it. For example, butter (my first choice!) contains fat and cholesterol. Vegetable shortening, like Crisco, contains no cholesterol, and the (vegetable) fats in it are much healthier than the fats found in butter. However, Crisco is made from hydrogenated oils, which are suspected to release free radicals within your body. Free radicals are suspected to be linked with the onset of certain cancers. Then of course there's lard....good for cooking almost anything, but bad if you happen to have arteries. Basically, if you eat your pie in moderation, you should use whatever type of shortening produces the best pie (in your opinion). As I said, I prefer (unsalted) butter. Some folks use plain shortening, some use flavored shortening, some use lard...all with favorable results. One or two slices of pie per week isn't going to hurt anyone, no matter what the pie is made of.

A good substitute for Shotening or Crisco is 1 cup of butter OR 1 cup margarine minus 1/2 salt from recipe.

Be careful. I bake rolls and pie crust all the time. If your recipe calls for shortening, then I wouldn't substitute. You might go on-line and see if you can find a recipe with something other than shortening.

Good old fashioned lard.Its actually the by far the best taste and textures for your baked goods.Some where the food police in cahoots with the food and drug administration conspired to make us no longer desire lard.Yet, it is vary desirable.Try a test.Lard will win hands down. They just scare and shame us out of all the good stuff

Earth Balance makes a shortening. You can check it out at earthbalance.net or buy it at a health food store and a lot of bigger 'regular' supermarkets are carrying it too, or you can special order it if your regular supermarket carries other Earth Balance products.
Spectrum also makes a vegan shortening. Go to spectrumorganics.com and buy it like above.

Is dependent on the context really. Which is better as a snack - fruits to me. It's tastier and gives you that little of sweetness. Which can be better as a snack if you are trying hard to slice back on sugar and lose weight vegetables
