I have a salmon filet that I just bought, I don't normally cook salmon, usually other fresh water fish or salt water fish. Do I take the skin off the one side before I cook it, or afterwards? Also, which is the best way to cook it?

When making yeast breads in my bread machine, they come out rather heavy. Can I simply add more yeast to make them rise better? I made French Bread last night, and while it tasted delicious it lacked that light feeling of a bakers loaf.

I have been looking everywhere for coconut cream, but can only find cream of coconut. Is there a difference? I have a recipe that specifically calls for Coconut Cream.

I go to this restaurant that has this killer Oriental Chickan Salad. I can make the Salad but I cannot find a good dressing in stores. So I was wondering if anyone has any good recipies.

I have eaten green breen casserole many times. I neither like it, nor dislike it. I can take it or leave it. Could someone please explain to me what all the fuss over this dish is? People go ga-ga over this stuff. If it turns up at a restaurant buffet, or church potluck dinner, or Thanksgiving, etc, people are all like "OOOOOooo green bean casserole!!!" and flock to it like it is the food of the gods, or something. What is so great about green bean casserole?

I'm making a chocolate cake on thurday afternoon to give to someone on saturday evening, there is no other time i can make it... will it be ok after that long if i put it in some sort of tin? I tried making a funnel cake a few days ago and I didnt have a funnel, had to make one out of paper but that didnt stable. When I tried making the funnel cakes the mix kept getting stuck in the hole becuase of the paper, So what can I do to make funnel cakes come out perfect like the ones at a carnival or knotts ? Also can I put the funnel cake mix in a blender and make it more smoother without chunks of flour ?

I had never had Eggplant before until about a year an half ago when my mother-in-law came for a visit from Europe. I loved it!!!!!! Too bad I don't remember the recipe for the vegetable stew she used the Eggplant along with other veggies to make it (it was so good I could just become a vegitarian and eat this stew all the time!)
But I was wondering why does the Eggplant need to be salted and drained for a day or overnight...I noticed her doing this, she doesn't speak English so I had to ask my husband to translate and ask her for me. She said or who knows maybe her answer was too complicated (because it seemed like her answer was a lot longer than what he said) and my husband translated back to me and said "It gets rid of toxins" I asked what kind of toxins and he just got frustrated and left without answering....
