i need a good recipe for curry cabbage. i have people over for dinner on saturday and they have asked for this. please help and i hope this is low fat recipe

CURRIED CABBAGE

1 head green cabbage, shredded
1 c. chopped celery
1 c. onion, chopped
1 c. green peppers, chopped
1 tbsp. butter
Garlic or garlic powder
2 tomatoes, chopped
Salt to taste
1/2 tsp. pepper
1/2 tsp. basil
1 1/2 tsp. curry powder
Parsley, chopped

Saute meat with onion, celery and peppers. Sprinkle salt and pepper over mixture while stirring. Drain mixture and set aside. In another pan, add butter and cabbage with basil and curry powder. Let steam until cabbage is tender.
Combine the first mixture with the cabbage. Stir in tomatoes. Cook slowly for 1 minute. Curried cabbage can be served with tacos or rice.

1 head of cabbage (any kind)

2 or 3 cans of potatoes... ( I know, cans YUCK... But they stay together better in stir fried dishes and taste better than you might think.

1 can of Chick peas.


Curry. You can buy one or make one?

Fenugreek
corriander
cardamum
cayanne pepper
garam masala
cumin
celery seed
chili powder
turmeric
asafoti (if you can find it?)
Some good Kona Coffee
crushed red pepper flake
course salt and peppercorns
onion powder and garlic powder (do not use garlic or onion salt)

about 1 tbsp of each ingredient...

Grind in a coffee grinder or a mortar & pestle.


Onion powder & garlic Powder salt and pepper

Ghee or olive oil? a few tablespoons.


heat up the oil in a large pan
flash fry the spices in the oil first to toast them taking care not to burn them...

Drain, and add in the potatoes first, cook for a while
add in the cabbage only after getting some color on the potatoes
stir and mix until cooked down a bit. then stop stirring and let fry a little
add more curry and some oil if too dry... and the other seasonings, stirr again then let sit again.

(we are trying to get it brown and golden... Stirring too much will not allow this to happen.
Drain and put the chick peas in, Stir again and then let sit again...


When it is all melded together and covered in the curry and you have allowed the spices to brown a little.

Serve with some Naan and re season at the table if you like?

This is also delicious with calliflower instead of cabbage.

I am completly a fan of curry. Whether it`s Japanese, Indian, or Thai. At home, I test & create new recipes for better & improveed currys. Now this one is completely mouth watering and has been judged at my community`s curry contest :)
I took 1st place babyyyyy! Please Enjoy.

Red Cabbage Curry:

35 min 15 min prep
4 servings

1 head red cabbage, shredded
2 large red potatoes, cut into 1/2 in cubes
1 small red onion, finely chopped
1 teaspoon caraway seeds
2 tablespoons curry powder
1 cup grated carrots
1 tablespoon extra virgin olive oil
1/2 cup water or vegetable stock

1. Steam potatoes until tender, set aside.
2. Saute onions in oil until translucent.
3. Add caraway and curry powder to onions, adding enough water to make a paste.
4. Add potatoes, cabbage and carrots and about one half cup of water or stock.
5. Cook until cabbage and carrots are just tender.
6. Serve hot on bed of brown, basmati or jasmine rice.

Lemony Cabbage Slaw with Curry - very low fat!

Yield: Makes 6 servingsIngredients: 4cups shredded green or white cabbage
2 tablespoons chopped green bell pepper
2 tablespoons chopped red bell pepper
1 green onion, thinly sliced
2 tablespoons cider vinegar
1 tablespoon lemon juice
1 tablespoon sugar
1 teaspoon curry powder
1/2 teaspoon salt
1/2 teaspoon celery seeds
Green and red bell pepper rings for garnish


Preparation: 1.Mix cabbage, bell peppers and green onion in large bowl. Combine vinegar, lemon juice, sugar, curry powder, salt and celery seeds in small bowl. Pour over cabbage mixture; mix well.
2.Refrigerate, covered, at least 4 hours or overnight, stirring occasionally. Garnish with bell pepper rings.
