Some eat tea sandwhiches or a patry but i on't want anything that must include buttter or mayonase, i'm not a big fan of that. i just want some thing simple. thnx.

i don't put mayo, mustard or dressings on my sandwiches, and when i don't have all the right "stuff" i just put some turkey & cheese together in some whole grain bread. that's simple. and surprisingly tasty. it's even better w/ just some avodaco!

Tea Cookies
INGREDIENTS
1 cup butter, softened
1/2 cup confectioners' sugar
1 1/2 teaspoons vanilla extract
2 cups all-purpose flour
1 pinch salt
1 1/2 teaspoons baking powder
3/4 cup chopped walnuts
1/3 cup confectioners' sugar for dusting
DIRECTIONS
Beat together the butter and confectioners' sugar till creamy. Add vanilla.
Mix the dry ingredients, stir into creamy mixture. Blend well.
Add the nuts, mix well, roll the dough out into two balls. Wrap in plastic wrap and chill for at least 1 hour in the refrigerator.
Flatten dough out and cut into 15 or 20 equal size pieces, shape into balls. Place on ungreased cookie sheet.
Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes till firm but not brown. While still warm roll into confectioners' sugar, let cool and roll again.

The most perfect simple cake I can think of when your having tea is the famous salt wafer and cucumber crunch. Just get some salted crackers plain and remove the skin from a small cucumber and thinly slice it and place on top of the cracker and enjoy. It is also fantastic if you add a little plum chutney available from all good supermarkets.

Blueberry Tea Bread
from Christine's Bed & Breakfast & Tea Room
1/2 cup sugar
1/2 cup oil
2 eggs
½ cup of orange juice or a little more if needed
2 cups of flour or a little more if needed
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon of Cinnamon
3/4 cup of blueberries

Preheat oven to 350 degrees. Grease a large pan or two small ones and set
aside, Cream all the wet ingredients together and then add the dry. The
batter should be not thick but loose. Bake until lightly golden and the top
of loaf springs back. Let bread cool.

Topping for breads:
1/4 cup of blueberries
1/2 cup hot water
1 cup sugar

Smash blueberries in small bowl. Stir in sugar until it is creamy. Take your loafs and prick fork holes on top of loafs.
Pour this sugar water on top of each loaf and let stand over night


Applesauce Tea Loaf
2 cups unsweetened applesauce

½ cup sunflower or other light oil

1 cup Sucanat® or other granulated sweetener

1 tsp. Vanilla

2 c. unbleached or whole wheat pastry flour

2 tsp. baking soda

1 tsp. ground cinnamon

½ tsp. ground nutmeg

½ cup seedless raisins, dried currants, or dried cranberries

Additional applesauce, optional



Preheat oven to 350 degrees F.

1. Prepare loaf pan by lightly oiling and flouring. 2. In large mixing bowl, stir together the applesauce, oil, sweetener, and vanilla. 3. In a separate bowl or on a sheet of wax paper mix together the dry ingredients: flour, soda, spices. 4. Blend these into the wet ingredients with a wooden spoon, beating vigorously until smooth. 5. Mix in the dried fruit, blending well to distribute evenly. 6. Pour the batter into the loaf pan, smoothing the top with the spoon. 7. Bake for 45 to 50 minutes, or until a toothpick inserted in the middle comes out clean. 8. Leave the loaf in the pan to cool to room temperature before slicing. Makes 8-10 servings.

Serve topped with a spoonful or two of applesauce, if desired.


Spiced, Ginger,

Currant Scones

2 cups flour

1 1/2 tsp. baking powder

1/4 tsp. salt

1/2 tsp. baking soda

1/3 c. sugar

1/2 tsp. cinnamon

2 tsp. minced crystallized ginger

1/8 tsp. allspice

6 T. unsalted butter diced

1/2 c. currants

1 egg

1/2 c. light cream

1 tsp. vanilla



Preheat oven to 400 degrees F. 1. Line a baking sheet with parchment paper. 2. Mix together flour, baking powder, salt, baking soda, sugar, cinnamon, crystallized ginger (finely minced), and allspice. Using two knives, cut in the butter until crumbly. 3. Mix in the currants. 4. In a separate bowl, blend egg, light cream, and vanilla. 5. Stir the two mixtures until dough holds together. This dough is a little sticky. 6. Create 1-2 balls with the dough and flatten into a circle on the baking sheet. 7. Bake 20 minutes or until top is light brown. 8. While hot, cut into wedges. Serve hot. These are sooo good.

APRICOT WALNUT TEA BREAD

1 cup dried apricots
1½ cups boiling water
2½ cups flour
1 Tbsp. baking powder
½ tsp salt
1 egg
1 tsp vanilla
1 cup sugar
½ cup vegetable oil
1 cup coarsely chopped walnuts

Preheat oven to 350°. Grease a 9" loaf pan. Cut the apricots into small pieces & place in a bowl. Add the boiling water; set aside to cool. Sift the flour, baking powder & salt & set aside. In a large bowl, combine the egg, vanilla, sugar & oil; beat until blended. Gradually add the apricot mixture, beating constantly. Add the flour mixture & beat until smooth. Stir in the nuts. Scrape the dough into the prepared pan.

Bake 1 hour. Let the bread cool in the pan for 10 minutes, then loosen with spatulas & transfer to a rack. Cool. Wrap in foil & store in the refrigerator at least 12 hours before serving.

APPLE SQUARES

Makes: 16 squares
Preparation time: 15 minutes
Cooking time: 30 minutes

1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup butter or margarine
1/2 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
1/2 cup peeled chopped apple (see notes)
1/2 cup finely chopped walnuts (about 2 ounces)
2 teaspoons cinnamon sugar (see notes)

Heat oven to 350ºF. Coat an 8-by-8-inch baking dish with cooking spray. Sift together the flour, baking powder, salt and cinnamon; set aside. Melt butter in a medium bowl; add both sugars, egg and vanilla, and beat with a spoon. Add flour mixture, apple and walnuts. (Mixture will be stiff.) Spread into baking dish. Sprinkle with cinnamon sugar. Bake 30 minutes; cool completely. Cut into squares.

NOTE: You can use 1/2 cup fresh blueberries instead of the apples. Look for cinnamon-sugar blend with other spices.

Iced Ginger Cookies

Makes 2½ dozen

Cookie
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup vegetable oil (preferably canola)
1 cup sugar plus 1 tablespoon (for sprinkling)
1 large egg, at room temperature
1/2 cup light unsulphured molasses

Icing
1/2 cup confectioner's sugar, sifted
1 tablespoon solid vegetable shortening
2 teaspoons water

1. Preheat over to 350 degrees.
2. In a small bowl, combine the flour, baking soda, ginger, cinnamon, and salt. Set aside.
3. In a large bowl, on the medium speed of an electric mixer, beat together the oil and sugar for 2-3 minutes. Add the egg and molasses, and beat well.
4. Add the dry ingredients and mix thoroughly. Drop by rounded teaspoonfuls onto ungreased cookie sheets, leaving several inches between for expansion.
5. Sprinkle lightly with sugar. Bake for 12 minutes. Cool the cookies on the sheets for 5 minutes, and then remove to a wire rack to cool completely.
6. To make the icing: Combine the sugar, shortening, and water, and beat until smooth and creamy. Cover until ready to use.
7. When the cookies are completely cool, spread a very thin layer of icing on each cookie with a small knife or spatula. Let the icing set before stacking the cookies or they will stick together.

today evening i had my tea with carrot cake covered in thick white icing..... homemade of cos.... try it goes really well..... if u wanna make ur tea smell gd, drop in a cinnamon stick in the kettle before u strain it........
