Yeah, there are a ton... just because something is low-fat, it doesn't have to be low-taste and high-flavor makes all-l-l-l the difference.

Low-Fat Berry Good Smoothie:

2 servings

1 1/2 cups low-fat plain kefir ((yogurt drink) *I use raspberry kefir)
1/2 cup grape juice
2 tablespoons honey
1 banana
7/8 cup frozen blackberries
7/8 cup frozen strawberries
7/8 cup frozen raspberries

1. Combine the kefir, grape juice, honey and banana in a blender.
2. Add the berries and blend until smooth.
3. Strain or put through sieve {note: I don't strain}.
4. I eliminate the blackberries

There are hundreds, but the main thing is to avoid fatty foods
Remove skin from Chicken, Fat from Steak and Lamb.
Buy lean mince.

Use oil instead of fat or butter
and so on

Pork & Bell Pepper Fajitas
Serve with a cup of black bean soup. Servings: 4

• 1/4 cup lime juice
• 1 1/2 teaspoons ground cumin
• 1/2 teaspoon salt
• 4 garlic cloves, finely chopped
• 1/2 pound pork tenderloin, cut into 2x1/2-inch strips
• 1 large sweet onion, thinly sliced
• 3 medium bell peppers (green,red or yellow or a mixture), thinly sliced
• 4 - (8 inch) fat-free flour tortillas

Mix lime juice, cumin, salt and garlic in shallow glass or plastic dish. Stir in pork strips and toss to coat. Cover and refrigerate, stirring occasionally, at least 15 minutes but no longer than 24 hours.

Remove pork from marinade; reserve marinade. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook pork in skillet for 3 minutes, stirring once or twice. Stir in onion, bell peppers and reserved marinade. Cook 5 to 8 minutes, stirring occasionally, until onion and peppers are tender but still crisp.

Place equal amounts of the pork mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over pork mixture; fold right and left sides over folded end, overlapping. Fold remaining end down.

Per Serving: 166 Calories; 2g Fat (12.4% calories from fat); 1g Saturated Fat; 15g Protein; 22g Carbohydrate; 7g Dietary Fiber; 37mg Cholesterol; 455mg Sodium. Exchanges: 1 Grain(Starch); 1 1/2 Lean Meat; 1 1/2 Vegetable; 0 Fruit; 0 Fat.


Deli Roast Beef and Pepper Sandwich
Serve with your favorite beverage. Servings: 2

• 1/2 cup thinly sliced sweet onions
• 1/4 cup thinly sliced green bell peppers
• 1/4 cup low fat Italian dressing
• 12 slices shaved deli roast beef
• 2 - 7 inch submarine rolls partially split, wrapped in foil and heated until warm.
• 2 tablespoons pickled pepperoncini pepper rings

Cook onions and bell peppers in dressing in medium skillet on medium heat for 5 minutes or until vegetables are crisp-tender, stirring frequently. Reduce heat to medium-low and add roast beef. Toss to coat and cook 2 minutes or until just heated through, stirring almost constantly.

Divide meat mixture evenly among warm partially split rolls and top with pickled pepperoncini pepper rings. Serve immediately.

Per Serving: 497 Calories; 7g Fat (12.6% calories from fat); 2g Saturated Fat; 20g Protein; 88g Carbohydrate; 5g Dietary Fiber; 12mg Cholesterol; 1382mg Sodium. Exchanges: 5 Grain(Starch); 1 Lean Meat; 1/2 Vegetable; 1 Fat; 1/2 Other Carbohydrates.


Asian Chicken Wraps
Serve with purchased plum sauce for dipping if desired. Servings: 4


• 1 tablespoon sesame oil
• 1/2 pound boneless skinless chicken breast cut in small strips
• 1/3 cup good quality hoisin sauce
• 2 tablespoons grated gingerroot
• 3 tablespoons apple juice
• 1 teaspoon sugar
• 3 cups shredded savoy cabbage
• 1 cup shredded carrots
• 8 fat-free flour tortillas (6 inches in diameter)
• Plum Sauce for dipping if desired

Wrap tortillas in foil and warm in oven.

Heat oil in a large nonstick over medium-high heat. Cook chicken in oil 8 to 10 minutes, stirring occasionally, until no longer pink in center. Stir in hoisin sauce, grated gingerroot, juice, sugar, cabbage and carrots; cook 4 to 6 minutes, stirring constantly, until cabbage is tender but still crisp.

Place 1 cup chicken mixture on each warmed tortilla; roll tortilla around filling. Serve with purchased plum sauce for dipping.
