Carbonara...

It comes from the Italian "carbone", which means coal.

Some believe that's because the first Italians to eat it were charcoal workers, others say it's because it was originally made over a charcoal fire, still others say it's because the little specks of bacon and pepper looks like charcoal flecks...

Either way, that's how you spell it and a little history...and of course the recipe:

CHICKEN CARBONARA

1 lb. spaghetti
4 oz. bacon, diced
1 med. onion, diced
1 1/2 c. heavy cream
2 chicken breasts, cut in strips
2 tbsp. butter
1/2 c. grated cheese
Salt and pepper, to taste
4 egg yolks
Some chopped parsley

Cook spaghetti in boiling water for 10 minutes. Meanwhile, in large saucepan saute the bacon bits until golden. Drain off some drippings; add butter, chicken strips and onion, and cook until chicken is tender.
Drain spaghetti and place into pan with chicken. Add cream, salt and pepper, stir well over heat until just boiling. Add the cheese and egg yolks. Turn off heat, stir well. Place on dish, top with chopped parsley; serve immediately.

Serves 4.

Hope ths helps!

CARDIAC ARREST CARBONARA

3/4 lb bacon
4 eggs
1 lb bow tie pasta
1/4 cup butter
1 cup heavy whipping cream
4 serrano chilies – chopped
3 large cloves of garlic – chopped
1 bunch of green onions – chopped
1 cup Parmesan cheese – shredded
1 tablespoon olive oil
8 oz sautéed mushrooms*

*Melt one stick of butter in saucepan; add mushrooms with liberal doses of lemon pepper, cracked black pepper and crushed red pepper, and a very generous layer of garlic powder. Stir and simmer until just tender. Set aside.
Cut bacon into small slices and fry until crisp in a deep iron skillet. Remove bacon w/ slotted spoon and place onto paper towel to drain. Add chilies, garlic and onions to bacon fat, sauté for 1 minute and remove w/ slotted spoon, & add to mushrooms. Add drained bacon to mushrooms. Retain one tbsp of bacon fat in the skillet. Turn burner setting to warm. Melt 1/4 butter in microwave and add to skillet.

Whisk eggs and cream in a bowl until well mixed. Fold in cheese.
