Anyone have a recipe for bean dip that tastes pretty much like the canned product? That stuff is soooo addicting, but unreasonably expensive.

Or do you cook right over the coals?I don't want it pink inside, but I like the kind of burnt texture the skin gets from direct grilling.

These are whole chicken parts that are rather large, approx 4 lbs worth.

I personally keep it simple, fresh garlic, beer, cilantro, tiny bit of lemon juice, pinch of sea salt and marinade for 2 hours b4 grilling. I just want some new ideas to try.

When I make jalphenio poppers on the grill, sometimes they are very mild and others they are very hot. I always make sure I get the membranes and the seeds out. Could it be that the pepper is to ripe and that makes it hot?

'5 Hour Melty Chicken'...Mmmm.
Get any old chicken, place on a big piece of aluminium foil, season with salt and pepper. Chop an onion and some garlic. Put some inside and the rest outside the chicken. Make a parcel with the foil, not too tight. Put the whole thing on a baking dish in the oven. Cook for 5 hours at 150 centigrade. Use the juices that come out as a basis for a fab gravy...I add lemon juice, soy sauce and redcurrant jelly. Enjoy.
