Chicken Pizza

Ingredients
Pizza dough:
120g plain flour
120g high protein flour
1 tsp easy blend instant yeast

Combine:
1 tbsp olive oil
150-160ml lukewarm water
1/4 tsp salt

Topping:
200g minced deboned chicken meat
1/2 a green capsicum, thinly sliced
1 onion, cut into rings
1 tomato, cut into rings
5 stuffed olives, cut into rings
2-3 tbsp tomato puree (canned or bottled tomato puree)
100g mozzarella cheese, thinly sliced or grated
Grated Parmesan cheese

Herb seasoning:
pinch of thyme
pinch of rosemary
dash of Italian seasoning
parsley flakes

Method
Sift plain flour and high protein flour into a mixing bowl. Fit machine with a dough blade. Add in yeast and combined water mixture. Beat mixture for two to three minutes or until a smooth dough is formed.

Cover the dough and set aside to proof for 35 to 40 minutes. Knock down the dough and place it on a lightly floured tabletop. Knead by hand for two to three minutes.

Roll out dough to fit a 28-30cm pizza tray or pan and brush the surface with a little olive oil.

Bake in preheated oven at 180 ºC for eight to 10 minutes. Remove dough out to cool slightly. Spread tomato puree on dough base. Arrange some mozzarella cheese evenly over the tomato puree.

Top up with cooked chicken meat and the rest of the ingredients. Sprinkle herb seasoning for extra flavouring.

Top with parmesan cheese and mozzarella cheese. Bake in preheated oven at 200 ºC or until dough is golden and the cheese melts. Serve hot.

How to make pizza base:
If you make your own pizzas using this base recipe you can choose the topping ingredients and make your pizzas as low fat and healthy as you wish. See Farmhouse Pizza Recipe.


Ingredients

dried yeast for this amount of flour (follow instructions on packet)
1/2 teaspoon sugar
1/2 pint warm water
2 cups strong bread flour
pinch sea salt
2 teaspoons olive oil

Method

- Mix the yeast with the sugar and five tablespoons of the water.
- Put in a warm place until the yeast begins to work (about 10 minutes).
- Sift the flour into a mixing bowl and add the salt.
- Make a well in the middle of the flour and pour in the yeast mix, the remaining water and the oil.
- Mix this into a stiff dough and knead on a floured board until it is stretchy and elastic.
- Put in a warm bowl and cover with a clean cloth.
- Leave the dough to rise until it doubles in size (about 45 minutes) in a warm place.
- Turn the dough onto the board again and knead for 4 more minutes.
- Roll out into a large round or as many smaller rounds as you want.
- Choose a selection of your favourite toppings for the pizza such as cheese, tomatoes, olives etc.
- Bake at 180 degrees centigrade (see temperature conversions) on a greased baking tray for about half an hour or until topping is browned and pastry base crisp.

This is enough to make two medium size pizza's:

4 cups flour
4 tbsp olive oil
1 tbsp table salt or sea salt
1.5 tbsp active dry yeast
2 cups warm water

Put flour on the counter, make a well and add all the ingredients. Mix with a fork, then mix just until all in well combined. Leave covered in a warm place for two hours.
Knead again and roll out to make the pizza base.

** PIZZA DOUGH **

1 (1/4-oz) package instant dry yeast (2 1/4 teaspoons)
2 1/4 to 2 3/4 cups unbleached all-purpose flour plus additional for kneading and dredging
1 cup warm water (105 - 115°F)
1 teaspoon salt

Whisk together yeast, 1 tablespoon flour, and 1/4 cup warm water in a measuring cup and let stand until mixture develops a creamy foam, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
Stir together salt and 1 1/2 cups flour in a large bowl. Add yeast mixture and remaining 3/4 cup warm water and stir until smooth, then stir in another 1/2 cup flour. If dough sticks to your fingers, stir in just enough flour (up to 3/4 cup), a little at a time, to make dough just come away from side of bowl. (This dough may be wetter than other pizza doughs you have made.)
Knead dough on a lightly floured surface with floured hands, lightly reflouring work surface and your hands when dough becomes too sticky, until dough is smooth, soft, and elastic, about 10 minutes. Divide dough in half and form into 2 balls, then generously dust balls all over with flour, cover with bowls or dish towel and let rest 10 minutes. Shape into pizzas, prebake 5-7 minutes at 400ºF.
Dough can be allowed to rise slowly, covered, in the refrigerator for 1 day. Bring to room temperature before using.

Makes 2 (10-inch) pizzas.


The Martha White mixes in a little bag are also real good. Use olive oil to coat the bowl when letting them rest.

A pizza base is usually made with a bread dough; so any bread recipe is good for pizza. You don't need to let it rise though, just roll out enough dough for your pizza, add toppings and cook.

For a quicker (and easier) base, use a basic plain scone recipe but bind with water instead of milk.

pizza base... pizza sauce, eh? if so, here's what I do: I use 3 of those small cans of tomato sauce to one of those small cans of tomatoe paste. I will mix a total of 6 sauce to 2 paste. then I add oregano, basil, and a tad bit of thyme and rosemary. I also use some garlic powder too. The amounts of these seasonings are iffy... probably 1/2 to 1 tsp of the oregano and basil. the rest is just a dash, same with a dash of salt.

This is more-or-less the recipe I used at a pizza place I worked at here in Louisiana.

it's very easy (but first, ensure you have a pizza stone to bake it in the oven).

1. Take 1 oz of yeast and combine in a large bowl with 2 cups warm water.
2. Add a pinch of sugar and a dollup of olive oil and mix to dissolve all the contents.
3. Add 3-4 cups flour and kneed it till soft, adding flour to a soft (not too wet. not too dry) consistency (abut 15-20 mins).
4. Dust the ball of dough with flour, put it in a bowl, cover with a towel and leave in warm place to allow it to rise.

Bread mixture rolled out in a circle/rectangle is what we use at home. The packet mixes you can buy in the supermarkets are the right quanity - everything is measured out for you, you just need to add water, and the instructions are written on the back of the box/packet.
