Chicken Salad
Tear Romaine lettuce,grate1/2 a carrot for color, slice some nice vine ripened tomatoes,(Hamakua Tomatoes from Hawaii are good), you can add some Arugula if you like that peppery taste. Grill, Sautee, or even microwave a pounded breast of chicken with whatever spices you like,eg. salt, pepper basil, garlic, whatever you like or have in your pantry.Slice chicken & place on top of salad. youcan use any dressing you want, I like Xtra virgin olive oil, balsamic vinegar & lime or lemon juice or both, even fresh squeezed orange juice works. Sprinkle with grated Romano, or Parmesean, or even bleu cheese, serve with a warm bagutte...voila! Sometimes I add sliced Japanese cucumbers, this can be almost a whle meal if you add an apetiser or desert or both. Nice bottle of Sauvignon Blanc or any light wine Buon Apetit

suggest you go to two websites: (1) South Beach diet and (2) Dr Atkins diet - Not pushing either diet, but they have recipes that are light - ESPECIALLY the South Beach Diet (which is safer than Atkins)

Also, if your don't want sugar/or fruit, suggest you go to your local library and start checking out cookbooks for diabetics or diets.....
