Ingredients:

1 quart ripe mashed strawberries
4 cups sugar, (do not reduce the sugar)
3/4 cup water
1 box fruit pectin, available at your grocers
Plastic storage containers



Instructions:

Measure 2 cups mashed strawberries into a large bowl. Stir in sugar and let stand for 10 minutes.

In a small saucepan, bring water and pectin to a boil, stirring constantly. Let the mixture boil for one minute while continuing to stir.

Combine fruit mixture with pectin mixture. Stir until all sugar is dissolved (about 3 minutes). Add the remaining strawberries to this mixture.

Fill the plastic containers to within 1/2 inch from the top. Cover with lids and let stand at room temperature for 24 hours.

Refrigerate up to 3 weeks. This jam can be frozen for up to one year.

Strawberry Jam


"This is by far the easiest recipe I have found for strawberry jam without using a pectin. The jam is soft, spreadable and delicious."
Original recipe yield: 5 cups.
Prep Time: 20 Minutes
Cook Time: 20 Minutes
Ready In: 40 Minutes

INGREDIENTS:

2 pounds fresh strawberries, hulled
4 cups white sugar
1/4 cup lemon juice


DIRECTIONS:

1.In a wide bowl, crush strawberries in batches until you have 4 cups of mashed berry. In a heavy bottomed saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). Transfer to hot sterile jars, leaving 1/4 to 1/2 inch headspace, and seal. Process any unsealed jars in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate.

To test for jelling:
Place three plates in a freezer... after about 10 minutes of boiling place a tsp of the liquid of the jam onto the cold plate. Return to freezer for a minute. Run your finger through the jam on the plate... if it doesn't try to run back together (if you can make a line through it with your finger) it's ready to be canned!

Put the strawberries and the sugar in a pot and add some fresh lemon juice. For every kilo of strawberries put 1 kilo of sugar. Leave the mixture about two hours in a cold place (do not freeze).
Boil the mixture. From time to time take with a spoon some liquid and put it on a cold plate. When the cold jam have looks like honey it is ready.

Just match the weight of how many berry's you have to the weight of sugar. Boil the strawberry's up first until the juice starts to come out. When the juice is bubbling add the sugar and keep stirring on high heat not allowing to boil over or burn until the drops of jam run down the spoon and don't drop off.

A friend of mine uses his breadmaker. I think this is cheating but he swears by it as you just put the fruit, sugar and water in the basket then switch it to jam setting and do something else for a few hours.
