Hi all you cooks, I am going to bake a pumpkin roll for my children for christmas desert. You know I mix up sugar, eggs, flour, pumpkin and bake it in a jelly roll pan. then fill it with cream cheese and roll it up. Problem is I ran out of wax paper. Have any of you ever used tin foil instead? I know I am supposed to grease the wax paper before I put in the mixture to bake, and leave a couple of inches on each side so I can lift the cake out after I bake it. But would it hurt anything if I use tin foil instead and treat it as if it were wax paper. I mean have any of you ever done this, used tin foil instead. If it will ruin the cake, I can go to the store for wax paper, but my car is in shop and I will have to walk 4 blocks. So if it is possible I will go ahead and use tin foil. Thank You

I'm looking into possibly becoming a pastry chef, and I was wondering if any of you out there had any advice on college courses, what college you would recommend, what classes I should concentrate on, any I should avoid, etc. I'm considering the art institute here in Atlanta, GA to become a CPC. I hope to eventually open up my own shop to do wedding cakes as my speciality but also do birthday cakes, truffles, etc. Any advice would be welcome. Thanks so much!!

I recently ordered a glass of domestic red wine in a restaurant. The wine had a wonderful boquet, one of the best I have ever experienced. Upon preparing to leave the bar, the bar manager inquired as to my opinion of the wine. I told her that it was an exceptional wine, but that it could have been cooler. To this she remarked at my perceived ignorance " these wines are never chilled, they are served at room temp" This really irritated me, I can see 58 or so degrees but this was on the warm side. Thanks

I need some crock pot recipes...I do not eat pork or red meat. Chicken and ground beef recipes are good...I'll just substitute ground turkey.

Thanks!!

Hi

I have been vegetarian for long time but only recently tried to cook tofu. Since tofu itself is high is fat I don't like to stir fry it in oil. What I have been doing is grilling or baking it. That way I can add the tofu in my allready made soup ( sometimes from freezer ) or just add it in salad. But takes really long time to do that. Maybe if everyone can share their tofu tips esp when used in soups and salads :)

All you fruitcake lovers…… I need your help!!!! I’m looking for a fruitcake recipe. I don’t want something that you searched on the web and find I need one that you’ve made. Nothing too hard to make, just something quick and easy. If you have any helpful hints that would be great. I had a great one last year…. It was nice and soft and not too fruity. Please help me if you can. Thanks in advance.

I used to make fun of people who peel it from the little end with no tab on it. I always thought of the tab like the tab on a soda can. But now I realize that the tab is the holder, and that it is a lot easier to open it from the other end if you puncture a hole with a fingernail. have you ever tried that?

Hi! I have been making red velvet cake for the past several years for Christmas. In order to make it red, I had to use 2 oz. of food coloring which I was never fond of. I was just reading about the natural food coloring for dyeing the Easter eggs with either cranberry juice or red beets (after boiling). Anyway, I was wondering if there is any natrual liquid (maybe cranberry juice???) that I could use instead of McCormick's food coloring?

Many thanks!
