Hi! I have been making red velvet cake for the past several years for Christmas. In order to make it red, I had to use 2 oz. of food coloring which I was never fond of. I was just reading about the natural food coloring for dyeing the Easter eggs with either cranberry juice or red beets (after boiling). Anyway, I was wondering if there is any natrual liquid (maybe cranberry juice???) that I could use instead of McCormick's food coloring?

You can't use liquid to dye the cake. It will alter the recipe. You need to stick to concentrated liquid dyes, gels, powders or pastes. I believe you can go to a natural food store or baking supply and ask if they have natural food dyes.

Although, nothing gives you that great red color like good old McCormick's...

In a Velvet Cake you use cocoa, and using natural color dyes instead of McCormicks; you may not achieve the color you want!

Note: Color outcomes are based on dyeing white foods; final colors will vary (based on original food product color & amount of coloring agent used (e.g. yellow cake + pomegranate juice will turn more orange than red). Some colors (or amts.) may affect final flavor. Puree & drain fruits of seeds before use & account for added liquid in the recipe. For richer colors, use thawed (frozen) or concentrated juices of fruits & veggies.

Pink: cranberry juice, raspberries, red currants, strawberries
Red: pomegranate juice, or dried, powdered, boiled, unsalted red beets (ground in the blender or food processor-won't effect flavor).

You won't get the same dark red colored cake using anything other than food coloring. Also, using fruit or vegetable juice will alter the taste of the cake.

If you have Sun Harvest stores in your area, look there. They carry a selection of natural food colors. They're kind of expensive though.

I would think that the kinds of things you are suggesting would change the flavor or you cake. I would stick with the food coloring.

Cooked red beets will add color and shouldn't change the flavor. After cooking, put in blender and add small amount to cake batter for color.

see if it changes the flavor
