I'm catering afor a big group and nowhere near here sells it.

You can mail order it. It's relatively cheap.

8 ounces beef broth
4 ounces soy sauce
4 ounces dry sherry
2 tablespoons arrowroot or cornstarch
2 tablespoons molasses
2 tablespoons tomato paste
2 cloves garlic, finely minced
1/2 teaspoon ground ginger
1/8 teaspoon black pepper

Combine all ingredients in a 4 cup glass microwaveable container and stir well.
Cover with plastic and cook on high power for 4 to 4 1/2 minutes or until thickened.
This makes about 1 3/4 cups of sauce.
If you need more increase the ingredients proportionaly or make several batches.

TRY THE FOLLOWING

Combine together the following
4 tablespoons soy sauce
2 tablespoons black bean paste
1 tablespoon honey
2 teaspoons white wine vinegar
1/8 teaspoon garlic powder
2 teaspoons sesame oil
20 drops hot sauce
1/8 teaspoon black pepper
Or use peanut butter and molasses rather than black bean paste and honey

or Hoisin Barbecue Sauce

Like ketchup in an American barbecue sauce, the Chinese condiment, hoisin, provides a satisfying contrast of sweet, salty and aromatic flavors.
ingredients
2 teaspoons vegetable oil
2 garlic cloves, minced
1/2 cup hoisin sauce
1 tablespoon light soy sauce
3 tablespoons sake or dry sherry
1 tablespoon ketchup
1 tablespoon rice vinegar
1/2 teaspoon Asian sesame oil

directions
Heat the vegetable oil in a small saucepan and cook the garlic over moderately low heat until fragrant, about 2 minutes. Add the hoisin sauce, soy sauce, sake, ketchup and rice vinegar and simmer over moderately low heat, stirring, until thickened, about 3 minutes. Remove from the heat and stir in the sesame oil. Let cool and serve.
MAKE AHEAD The hoisin barbecue sauce can be refrigerated for 2 days.

Yeah... Go to your local Asian market and buy a huge gallon sized bottle of Kikkomon.

Don't try and make it yourself unless you know an Asian person that knows how!
