CLAM CHOWDER
5 cans (10-3/4 ounces each) condensed reduced-fat cream of potato soup, undiluted
2 cans (12 ounces each) evaporated skimmed milk
2 cans (10 ounces each) whole baby clams, rinsed and drained
1 can (14-3/4 ounces) cream-style corn
2 cans (4 ounces each) tiny shrimp, rinsed and drained
3/4 cup crisp-cooked and crumbled bacon (about 1/2 pound) or imitation bacon bits
Lemon pepper to taste
Oyster crackers
Combine all ingredients except crackers in slow cooker. Cover; cook on LOW 3 to 4 hours, stirring occasionally. Serve with oyster crackers.
Slow-cook Chicken & Mushroom Stew
1 can cream of mushroom & roasted garlic soup
5-6 fresh, boneless, skinless chicken breasts
Salt and pepper to taste
1 package (8 oz.) med. white mushrooms
1 cup baby carrots
2 celery ribs, cut into 1 1/2 inch lengths
In slow cooker, stir together soup and 1/2 can of water. Cut chicken into 2-inch chunks. Sprinkle with salt and pepper. Put chicken into cooker. Add mushrooms, carrots and celery. Stir gently to mix. Cover and cook on low for 6 to 8 hours or until chicken is done.
Sweet and Sour Chicken
1 medium onion, sliced
1 medium carrot, peeled, sliced
1 medium celery stalk, sliced
1 lb. boneless skinless chicken thighs, cut into bite-size pieces
1/2 cup KRAFT CATALINA Dressing
1/2 cup soy sauce
1/2 cup firmly packed brown sugar
1 tsp. grated gingerroot
1 can (8 oz.) pineapple chunks, drained, juice reserved
1 medium green pepper, sliced
1 medium red pepper, sliced
about 4-1/2 cups hot cooked Rice
PLACE onions, carrots and celery in slow cooker; top with chicken. ADD dressing, soy sauce, brown sugar, gingerroot and pineapple juice. Cover with lid. COOK on LOW for 7 to 8 hours (or on HIGH for 3-1/2 to 4 hours), adding pineapple and peppers for the last 30 min. of the cooking time. Serve over rice.
Crock pot macaroni and cheese
16 oz. box of macaroni (for 5 qt. pot)
3 large cans of evaporated milk
3 cups shredded cheese, chedder or whatever kind you like best
3 eggs
1 stick melted margerine
salt and pepper to taste
1 tablespoon sugar
Mix all together and put in crock pot. Cook on low 3 hours. Add a little extra cheese on top if you love it real cheesy.
Casserole in the Crockpot
1 package (16 oz) frozen broccoli cuts, thawed and drained
3 cp cubed fully cooked chicken
1 can condensed cream of mushroom soup, undiluted
1 jar (8 oz) process cheese sauce
1 cp milk
1 cp uncooked instant rice
1 celery rib, chopped
1 small onion, chopped
In a slow cooker, combine broccoli and chicken. Combine the soup, cheese sauce, milk, rice, celery and onion; stir into the broccoli mixture. Cover and cook on low 4-5 hours or until rice is tender. 4 servings.
White Chicken Enchilada casserole
5 boneless, skinless chicken thighs or breasts
1 (26 ounce) can condensed cream of chicken soup
2 cloves garlic, chopped (optional)
1 (16 ounce) container sour cream
1 (7 ounce) can diced green chile peppers
15 flour tortillas
3 1/2 cups shredded Monterey Jack cheese
1 (10 ounce) can sliced black olives (optional)
chives for garnish (optional)
black pepper to taste
Place chicken in a pot, cover with water, and bring to a boil over high heat. Continue to boil until the chicken is done, about 10 minutes. Drain, allow chicken to cool, and cut into small pieces. Place chicken pieces in a large bowl. Stir in soup, garlic, sour cream, and green chiles. Spray the inside of slow cooker lightly with non-stick cooking spray. Tear tortillas into pieces, and arrange half of the pieces in one overlapping layer across the bottom of the slow cooker. Arrange half of the chicken, half of the soup, and half of the cheese on top. Repeat with remaining tortillas, chicken, soup, and cheese. Top with black olives. Cook on Low setting for 3 to 4 hours. Top with chives.
CHICKEN AND DUMPLINGS
4 boneless skinless chicken breasts, cut in small chunks
2 cans condensed cream of chicken soup
1/4 cup onion, finely diced
2 cups water
1 chicken bouillon cube
2 10 oz packages refrigerated biscuits
Combine all ingredients, except biscuits, in a crock pot. Cover and cook on low for 5 to 6 hours. 40 minutes before serving turn crock pot on high. Tear or cut biscuit dough into 1-inch pieces. Add to your crock pot; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.

Coq Au Vin
3 pounds Chicken
4 Garlic cloves
2 Bay leaf
1 each Onions -- sliced
1 Carrots -- whole or sliced
4 Potatoes -- cut into wedges
2 cups Wine, red -- burgundy suggested
3 cups Stock, veal -- skip if too full
1 teaspoon Thyme leaves
1 tablespoon Parsley leaves
4 slices Bacon
8 ounces Mushrooms, fresh
8 ounces Onions, pearl
Remove giblets and neck from chicken. Stuff garlic and bay leaves into chicken cavity. Place in crockpot, breast side down, and add onions, carrots, and potatoes. Add wine and seasonings. If there is still plenty of room in the crockpot, add stock. Remember that chicken juices will raise the liquid level in the crockpot during cooking. Cook on LOW all day.

Baked Slow Cooker Chicken
INGREDIENTS
1 (2 to 3 pound) whole chicken
salt and pepper to taste
1 teaspoon paprika
DIRECTIONS
Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

CREAMY SCALLOPED POTATOES CROCKPOT
2 lbs. potatoes or 6 med. thinly sliced
1 sm. onion thinly sliced
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
3 tbsp. butter
1 (10 oz.) can cream of mushroom soup
4 slices American cheese
1 c. water
1/2 tsp. cream of tartar
Toss potato slices in water and cream of tartar. Drain. Put half of potatoes in greased crockpot. Top half of onion slices, flour, salt and pepper. Add remaining potatoes and onions and sprinkle rest of flour on top. Add butter and undiluted soup. Cover and cook on low 7 to 9 hours or high 3 to 4 hours. Add cheese 30 minutes before serving. Recipe may be doubled.
