I'm going to be doing some simple baking (cobblers, dump cake, etc.) when out west skiing soon. My recipes do not indicate how to handle high altitude. Does it take food longer to bake or less time? Do you increase the oven temp or lower?

I made homemade stuffing for the first timeand it was a total mess..lol. It was more like a cassrole, not for stuffing a turkey or chicken. I toast wheat bread and cut it into squares. I sauteed onions in butter (don't like celery). I made chicken broth with two cups of water and added puoltry seasoning. I combined the onions/butter and chicken broth and coated the bread with a beated egg. Then I put the mixture of the bread, tossing it. I then baked for 40min 325 degrees. The bread pieced did not stick together at all. It just looked like baked squares instead of stuffing. Was i suppose to mush the bread? cut off the edges? Use white bread instead? How do I make it come out better the next time?

Is it okay to eat chicken cooked two days ago i.e. say Tuesday evening it was cooked and to eat it on Thursday evening?. The chicken was put into the fridge once it was cold after cooking. I am unsure in terms of bacteria etc that may produce on it since its been cooked. thanks for your response in advance!
