I bought a bit of meat off the reduced aisle in Tesco labelled pork topside.. I am looking for recipes online but there is no sites anywhere that refer to pork topside - would it be tenderloin?

No. Topside and tenderloin are totally different cuts off the pig.
Tenderloin is the equivalent of the fillet in beef, so comes as a long piece of meat with very little fat. Cooks very quickly when cut into thickish slices, slightly flattened with the heel of the hand and pan fried with, say, chopped onion, mushrooms, quartered apples, seasoning and a little liquid (wine, apple juice or stock are all good.) In the oven (seasoned with salt, pepper and rosemary or sage, then rubbed with a little oil) it takes about 35minutes on high to roast.
You are probably not interested in this answer because I am not telling you what you want to know about topside of pork !!! BUT would imagine it roasts like a piece of beef topside but needs to be cooked right through rather than left pink in the middle and probably needs to be kept moist while cooking. I hope you enjoy it. Do try tenderloin.

pork topside
1 stock cube
1/2 cup hot water
1 tbsp worcestershire sauce
1 large carrot sliced
2 celery sticks sliced
1 onion quartered
2 bay leaves



Braised Topside Method:

Trim off excess fat, pierce the meat all over with a skewer and place in a casserole dish. Dissolve the stock cube in the hot water and worcestershire sauce and add to the dish. Cover the Braised Topside and cook on medium for 35 minutes. Turn the meat and add the vegetables and bay leaves cover and cook on low for 70 minutes. Leave the Braised Topside standing covered for 10 minutes. If using a microwave thermometer remove it from the oven when the temperature reaches 65 degrees.
Serves 6 to 8 / set: medium and low.

Go on the "channel 4" website and click on "food" on the left hand collum. then on the right under gordon ramsey, click on "F Word", then there will be a link to recipies. Not sure if there's one for topside of pork but there is some tasty stuff on there!

A leg of beef will not fit in your oven, for a start. Cows are big animals!! Beef chops are called steaks, ribeye, tbone, etc are all chops if they are cut off a sheep or a pig. They don't leave the bone on most of these again, because they take up too much room and since you are paying by the pound, they add to the cost which is unacceptable to the thrifty householder ...
