Slow Cooker Vegan Baked Bean(It tastes like the canned stuff!)

* 1 lb. pkg. dried navy beans
* cold water for soaking beans
* mustard (your choice on type)
* 1/2 c. molasses
* 1 tsp. sea salt
* 1/3 c. honey
* Smart Dogs (or any other brand of tofu hot dogs)
* 1 large onion, chopped, sauteed in extra virgin olive oil until slightly brown

Take the navy beans and place them either in your slow-cooker or some large bowl. Add enough water to cover the beans by 3-4 inches. Allow it to sit overnight. In the morning, (or whenever) drain the water out and rinse the beans. Now add enough fresh water to cover the beans by about 1 - 1 1/2 inches. Put the slow-cooker on high all day. Get all the other ingredients ready... slice the Smart Dogs into 1/4 or 1/2 inch slices (whatever you like) and get all the seasonings together. Now shut off the slow-cooker and add all the ingredients. Stir well and let it sit for about 30 minutes to an hour to allow the flavors to mingle. Then serve. (If you really want the flavors to mix, then put everything away in the refrigerator when you've finished cooking everything and take it out the next night for dinner.

Spanish Chicken:
Put 4 split chicken breasts that you have removed the skin from in the slow cooker.
Stir together 1/2 can of any brand of beer, a can of tomato paste and 1/2 a jar of pimento stuffed olives with the juice, 1 corsely chopped green pepper, 1 cloves chopped garlic & 1 chopped onion.
Pour this whole mixture over the chicken in the slow cooker, cover and cook 8-9 hrs. on low.
This is great to throw together before you leave for work in the morning...when you walk in the house at fter work it smells delish and dinner is done!!

I love my slow cooker and use it at least once a week. My favorite recipe is for Red Beans and Rice. Let 2 cups of hard red beans soak in 3 cups of water overnight. The next morning put them in the cooker with a chopped up medium onion, 2 chopped cloves of garlic, 2 tsps salt and 1 tsp Tabasco sauce. Let it cook on medium high from about 8 am to 5 pm. After that, add 1.5 cups of instant rice and chop up 2 pieces of Butterball Extra Tender Turkey sausage. Let it sit for another 15 minutes or so, then eat. It's delicious, cheap and very healthy. Enjoy! And as my cajun friends say, laisse le bon temps roulet!

I am the queen of eating healthfully on a budget! Yes, eating healthfully without spending a lot of money is entirely possible. Spaghetti is healthy and is inexpensive, esp. with whole wheat pasta. Tomato, cucumber, lettuce and dressing for salad is not expensive either. Look for the vegetables on sale! Home made coleslaw is cheap-- chopped cabbage and carrot with a dressing recipe. Eggs are great for you and are not expensive. I love eating home made refried beans with cheese and griddle-heated tortillas-- just look for a vegetarian recipe. That being said, substitute beans for meat a few nights a week. They are so good for you and loads cheaper than meat. Lentils are very high in protein and make a lovely and filling soup. Google an easy recipe to start. So those are a few ideas-- the best thing for you to do is just get in the kitchen and learn how to cook. People who know how to cook are best able to utilize their food in the kitchen and work with different ingredients on hand. Lastly, there are a jillion cookbooks published with just these kinds of recipes-- healthy and inexpensive. Do some looking on Amazon or Google and find one you like. Good luck!

Put a whole chicken in the pot (you can take most of the skin off if you'd like leave some on for flavoring) Season to taste (mustard, butter, salt, pepper, paprika, cumin) then add some carrots and onions add a little bit of water but the chicken will give off tons of juices. Cook on high for like 4-5 hours (depending on the size of the chicken). You'll have a healthy meal for little money and leftovers for a while.

if you're ok with vegetables, try this recipe:
(measurement is accdg to your needed intake)

Saute with olive oil: tomatoes, onions, and garlic with a little bit of salt and abt 1-2 tbsps of ground beef (no pork)
And then, when they're brown enough: put in maybe 1 or 2 cups of water (as i've said the measurement depends on you). Put in squared squash, sliced stringbeans, sliced cabbage, rounded carrots (or you can cut the carrts into strips). Cook until the desired crispness is reached. and it should smell good!

Stew

Dice potatoes, carrots, celery. onions, and any other veggies you may want to to throw in there. Cut meat of choice (pound and a half to 2 pounds Chicken, Beef, Lamb, Ect) into cubes no larger than 1 inch and dredge in flour seasoned with salt and pepper and I add sage. Brown meat in skillet and put all veggies and meat in crock pot. Cover with stock or water and bullion cubes and let simmer for 4-6 hours. If you want add a little wine for flavor and there you go simple and cheap.
