But why does it only happen to slices of bread and not the whole loaf?

Because ice crystals form in the bread when you freeze it, when you defrost the bread those ice crystals melt, causing the bread to go soggy.

Your problem is due to your bread being frozen for too long. A good tip to prevent this happening again is to put your bread in an air tight container before freezing. It will keep indefinitely and won't be soggy when you defrost it.
Also when defrosting bread place it on some kitchen roll and let it defrost at room temperature. It will only take ten minutes or so to defrost.

I've never had that problem - and I've frozen sandwich bread for a long time. We don't eat that much bread, so a double loaf from BJs will last close to 6 months in my house.

I do run into that with thicker breads, and rolls, but I don't generally buy more of those than I need.

cause 4 something to freeze the ingredients has to turn ice like. Then when it defrosts the ice melts making the bread soggy

I couldn't tell you, because I never have that problem. I freeze bread, and when it gets defrosted, it's fine.

it shouldnt do if you defrost it slowly on absorbent paper, if it does put it in the microwave for a few seconds.

That only happens when you leave it in the freezer for a long time, ie months.
