Try the following
Mushroom and mozzarella burgers with tomato sauce and griddled vegetables
Ingredients
2 cloves garlic, peeled and chopped
2 mushrooms, diced
½ red onion, chopped
50g/2oz plain flour, sifted
25g/1oz mozzarella
50g/2oz breadcrumbs
handful of fresh parsley, chopped
salt and freshly ground black pepper
25g/1oz butter
15ml/1 tbsp vegetable oil
2 slices farmhouse bread, toasted
For the tomato sauce
1 tsp olive oil
½ tomato, chopped
25g/1oz tomato paste
25g/1oz tomato ketchup
dash of Worcestershire sauce
For the griddled vegetables
2 mushrooms, cut in large slices
½ red onion, cut in large slices
2 baby fennel, cut in large slices
splash olive oil
salt

Method
1. Preheat a medium frying pan.
2. Preheat the oven to a medium-hot heat.
3. Place the garlic, mushrooms and onion in a food processor and blend.
4. Place the mixture into a medium bowl.
5. Mix in the flour, mozzarella, breadcrumbs, parsley and seasoning.
6. Gather the mixture together with your hands and shape into two large patties. Dust the patties with a little extra flour.
7. Melt the butter and vegetable oil in the frying pan. Fry the patties for three minutes, either side.
8. Transfer the patties to the oven for a further 7-10 mins.
9. Serve the patties on the toasted bread.
10. To make the tomato sauce, preheat a medium saucepan and a griddle pan.
11. Heat the olive oil in the saucepan.
12. Add the tomato and sauté until soft.
13. Add the tomato paste and ketchup and the Worcestershire sauce.
14. Turn down the heat and allow to simmer. If the sauce is too thick, add some hot water.
15. While the sauce is cooking through, brush the vegetables with oil and salt.
16. Place the vegetables in the griddle pan and griddle until softened and browned.
17. Serve immediately with the burgers and the sauce on the side.

I either just grill up some Portabella mushrooms and eat those like a burger, or I buy Morning Star brand. Boca brand isn't bad, but I like Morning Star better for some reason - and they seem to have more variety in my area.
