I just moved into a new house and the lady who lived here before me said that the apple trees in my yard were baking apples. Does anyone know what the best way to prepare them in a pie? Do I need to add more sugar? I appreciate your input, and if you know of any links I would appreciate it. Thank you all!

Many years ago, we would go to San Francisco Chinatown to buy an orange pie. It was delicious with a mild orange flavor, not too sweet. That restaurant closed and I can't find the pie anywhere. It was in a prebaked crust, had whipped cream on top, pie was refrigerated, filling was orange gelatin (not a custard). I've asked others but no one seems to have any suggestions.
