use should use a whole milk, but i've found that if you use cream or half and half, you will have a much creamier icing. If you don't have whole milk, you would be safe with 2% even.

Any kind of Milk
Here's the recipe for carrot cakes icing

3 1/2 cups confectioners' sugar
1 (8 ounce) package Neufchatel cheese
1/2 cup butter, softened
1 1/4 teaspoons vanilla extract
1 cup chopped pecans

In a medium bowl, combine confectioners' sugar, Neufchatel cheese, 1/2 cup butter or margarine and 1 1/4 teaspoons vanilla. Beat until smooth, then stir in 1 cup chopped pecans. Spread on cooled cake.

unless the recepie states what kind of milk then you should be using whole milk. for cream cheese icing ( used on carrot cake), you will need 1/4 lb. unsalted butter, 1 1/2 lbs. cream cheese, at least 1/2 -1 1/2 lbs powdered sugar, and real vanilla extract. let the butter and cheese soften at room temp. should take a few hours until they are both thoughourly softened. add both to a mixing bowl along with 1 tsp. vanilla extract and mix to combine. add the sugar 1 cup at a time until you get the flavor and sweetness you desire. i like to add just enough sugar to make the cheese and butter slightly sweet. keep this icing at room temp. for use and refridgerate any left over, you can freeze the left over too. I'm sure you know but just in case you don't it will be a lot easier to ice your carrot cake if it is frozen. you may have to "crumb coat" your cake. this means use a small amount of icing to coat the cake before trying to ice the whole cake. doing this will keep crumbs from showing up in your final icing layer. good luck. try this icing on chocolate cake too!!!!

I would user whole milk. Not 2% or skim. Are you making the cooked butter cream icing? Cream chees icing for carrot cake. I do not have a recipe handy for that. Sorry.

Any type of milk can be used, or even water. You just need a liquid.

Cream cheese icing is divine on carrot cake :-D

The type of milk doesn't matter so much. The lower in fat it is, the less rich it will be. If you use whole milk, you'll have a better icing. In fact, you can use cream and really be in ecstacy!

Granted, I don't watch the network anymore, but www.foodtv.com has a lot of great recipies.
