1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1/2 teaspoon sea salt
4 eggs
2 teaspoons olive oil

DIRECTIONS:
Stir together the all-purpose flour, whole wheat flour and salt in a medium bowl, or on a clean board. Make a hollow in the center, and pour in the olive oil. Break eggs into it one at a time, while mixing quickly with a fork until the dough is wet enough to come together. Knead on a lightly floured surface until the dough is stiff and elastic. Cover, and let stand for 30 minutes to relax.
Roll out dough by hand with a rolling pin, or use a pasta machine to achieve the desired thickness of noodles. Cut into desired width and shapes. Allow the pasta to air dry for at least 15 minutes to avoid having it clump together.


To cook fresh pasta:

Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 2 to 3 minutes. Fresh pasta cooks very quickly. It will float to the surface when fully cooked. Drain, and use as desired.

I like to use whole wheat noodles, rotini, and fettucini pasta.

1. Saute a bunch of chopped garlic, onion, and mushrooms in olive oil.

2. Boil up the noodles and when one minute is left to go, add a package of sun dried tomatoes.

3. Drain the noodles and tomatoes, then add the sauteed vegetables.

4. Finish it off with (pick one or more according to taste) smoked salmon, shrimp, basil, pine nuts, feta cheese, mozzarella cheese, fresh green beans, broccoli flowerets, or greek olives.

You can use any recipe you would use with regular noodles. The old favorite. One pound of noodles cooked 2 small cans of tuna 2 cans of cream of mushroom soup 1 small jar of pimentos Mix well and pour into a casserole dish. Top with crushed Wheaties and bake at 350 for 40 minutes.

pre cook the noodles and set them aside.

in sesame oil, sautee some fresh garlic,shrimp or chicken,snow peas, red peppers, baby corn, (really what ever veg you like =) )
add the noodles and toss it all together and then top it all with some warm sesame ginger dressing.

it is really delicious and very healthy too.

Add in fresh peppers, mushrooms, garlic, tomatos with some italian dressing and parmasan cheese - yummy! Ivillage.com has great recipes by the way.

i make the noodles and put cheese on it or a can of canned stewed tomatoes both very good

1or 2 serrano chiles.
2 tablespoons cilantro
1 tablespoon fresh lime
half of a tomato
blend to desired texture. hope thats good enough hon, i tried it. its great!!
