No Bake Cheesecake

2 (20 sheet) packages graham crackers
11 tablespoons unsalted butter, melted
2 tablespoons sugar
2 (8 ounce) packages cream cheese, room temperature
1 (14 ounce) can sweetened condensed milk
1/4 cup fresh lemon juice
You can top this with strawberry topping this is sooooo good
1 teaspoon vanilla extract
Put graham crackers in a large reseable plastic bag, and crush them with a rolling pin until very fine crumbs form.
Pour crumbs into a medium bowl; stir in sugar add butter, and stir until well combined.
Press crumb mixture into a 9-inch springform pan; spreading it 1 1/2 to 2 inches up the side; press flat. Chill crust in freezer at least 10 minutes.
Meanwhile, make the filling. Using an electric mixer set at medium high speed, beat cream cheese in large bowl until smooth. Beat in the condensed milk a little at a time. Beat in lemon juice and vanilla.
Pour filling into crust, cover and refrigerate 2 1/2 to 3 hours.
Remove side of pan.

Pear Bake

The original, using pineapple, came from a link on the Less-than-Fivers Hot List (Family Recipes).
Back to the recipe - somewhere I read a list of interchangeables regarding canned fruit. I had a can of pear halves and it sounded good so why not - I chopped them up and proceeded: Mix one large can drained fruit, 3/4 cup sugar, 3 tbsp. flour and 3 tsp. juice. Might need more juice, the consistency should be like a heavy syrup. Pour over fruit chunks in 9 X 9 baking dish. Then mix 1 cup shredded cheddar (or more), 1 1/2 crushed Ritz crackers (1 "sleeve") and 1/2 stick butter. (Cut into chunks.) Distribute evenly over fruit mixture. Bake at 350 for about 15 minutes or until cheese melts and it's just starting to bubble.

Well, for me I love fruit for dessert. This is one of my favorites, and it's SIMPLE!

1 large navel orange, peeled and chopped
12 large strawberries, sliced
1/2 pint blueberries
1/2 pint raspberries
1/2 pink blackberries
2 tablespoons sugar
1/4 cup orange liqueur (I recommend: Grand Marnier)

Just mix 'em all together, but be careful how long you let the fruit sit in the liqueur. I would suggest draining the liqueur when you notice the fruit is starting to be broken down from it, otherwise it will get too mushy. This is great to go on french toast or pancakes also for a brunch - just pair it with an orange mimosa:

1 tablespoon orange liqueur. Add Champagne to fill 2/3 of a flute, then top off each glass with orange juice.

Strawberry shortcake.
Go to the store buy some strawberries and little angel food cups or sponge cakes, oh and some whipped cream (in a can).
Bring it all home.
Cut up the strawberries and sprinkle with sugar, then put them in the fridge. A nice syrup will form.
When your ready, place the little cakes in or on little individual plates or bowls, spoon the strawberries over the cakes and then squirt each one with whipped cream.

OMG GOOD!
Store bought Brownies ( with or without nuts).
1 8oz. pkg cream cheese (any brand)
1-cp powdered sugar (confectioners sugar) I have used regular sugar.
small container of sour cream.
Fresh or frozen strawberries.

Mix cream cheese, sour cream, and sugar together until well blended.
cut brownies in bite sized pieces. Spread each brownie with cream cheese mixture. Add a half of a strawberriess or a dollop of frozen strawberrie to each iced brownie. Sounds simple but OMG...everyone will love them and you will too. If you want to you can add a swirl of chocolate syrup on top and a bit on the plate for a added pizazz.
