The only way I think it could be done is to put the pineapple juice in your water as well as the brown sugar.

Lets see mix pineapple juice and brown sugar with a little water and put it in the water bowl in your smoker, I would also soak some apple wood and place it on the coals to help flavor the turkey.

During the smoking process the flavor of the juice, sugar and the apple wood would blend and flavor the turkey.

Start with a ham.

Turkey and pork are two different animals, no pun intended. You will get neither the same taste nor texture. The best you can do is to smoke the dark meat of the turkey, it will be the closest in flavor, especially if you use hickory.

I would recommend using an electric smoker because you can control the temperature better.

If a turkey tasted like ham, I wouldn't eat it. Just put the turkey on the grill and smoke it.

We smoke our turkeys every year for Thanksgiving. You need to brine the turkey in heavily salted water for about 8 hours. This has to be done in the refrigerator. Take the turkey out of the brine, rinse it and dry it with paper towels. If you have a V-rack you can use this on your barbeque. Bank your charcoal to one side of the barbque and add a few chunks of wood (hickory is good) that have been soaked for an hour in water (this gives the smoke flavor). Put the turkey on the cooler side (indirect heat) and cook it for about 20 minutes a pound. You may need to add more charcoal to your fire to keep it at the right temperature. when you smoke a turkey, you put it in the smoker with wood in it for a few hours. About 8 hours I think, and no, it does not taste like ham, it tastes like smoked turkey. It will sort f let in your mouth it is so good. Now you have me craving one..

Use morton tender quick, it makes meat taste like ham.

1 gallon water
1 cup kosher salt
2 TBSP Morton Tender Quick
Combine all ingredients in a large pot and heat to 160°F.
brined the turkey in this solution for 12 - 48 hours.

Then cook it as you would normally smoke your turkey
