My mother is a diabetic. I've been making her the jell-o brand instant pudding on occassion. However, it seems no matter how long I mix it, it is extremely lumpy. Any ideas on how to rectify this problem?

When stir frying strips of chicken or beef I often find that, no matter how hot the oil is, the meat invariably starts "sweating", i.e. gives off large amounts of liquid. As a result, stir frys end up kind of soupy rather than dry and crispy. Any tips on how to stop this from happening?

I bought some breadcrummed covered scampi yesterday. It is cooked from frozen by placing it into a hot oven.

But what can I eat with it? I am sick and tired of having the same old food everyday when there are som many different recipes floating around.
