ITALIAN BEANS PARMESAN

½ cup chopped onion
½ cup chopped green pepper
1 Tbsp. butter or margarine
1 (16 oz.) can whole new potatoes, drained and sliced
1 (14 1/2 oz.) can stewed tomatoes
1 (16 oz.) can cut green Italian beans, drained
¼ cup Parmesan cheese

In skillet, saute onion and pepper in butter until soft. Add potatoes; saute 2 minutes. Add tomatoes, cook over high heat until slightly thickened. Add beans, heat through. Sprinkle with cheese. Makes 6 servings.

Here's a good one....... Cook the potatoes with 3 crushed cloves of garlic, 2 tablespoons of butter, and a half cup of finely chopped onions. when there done, cool them in a bowl and add 1/4 to half cup of milk and 2 tablespoons of mayo or mirclewhip...mash them up good and you have a small feast ...

add canned french cut green beans and canned corn with a little bit of butter pepper and minced garlic (if you like), make sure the potatoes are mashed just slightly

Mayonnaise, cucumbers, tomatoes, eggs, and onions with the potatoes will make a great potato salad.

If I have canned taters I usually just slice them up - add a little oil to my pan, add the taters and some sliced onions and cook.
We all like them that way and its easy

My mom makes them with a mexican tomato sauce with jalapenos in it. I fry them in butter and add in eggs and cut up smokie links, or just fried.

you can also toss them with some italian seasoning and olive oil (or italian dressing) then roast them for a few minutes
