Sorry to be boring, but scampi may only, by law of the land, be eaten with chips and tartare sauce. If you want to try something different, you probably need to work with fresh ingredients and make something from scratch!

Pesto Rice Salad
by Delia Smith
This gutsy, herby salad by Delia Smith can also be served warm as a first course...
Servings: 4-6
Level of difficulty: Easy
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Ingredients
225ml Arborio rice, measured in a glass measuring jug
450ml vegetable stock, boiling
1 lemon, juice
2 tbsp extra virgin olive oil
3 fresh basil leaves
4 Spring onions, finely chopped
25g Parmesan cheese, (Parmigiano Reggiano) shavings (made with a potato peeler)
0.5 tsp salt and fresh ground black pepper
For the pesto sauce
50g fresh basil leaves
1 large garlic clove, crushed
1 tbsp pine nuts
6 tbsp extra virgin olive oil
25g Pecorino Romano cheese, grated
0.5 tsp Salt
Method
1. To make the pesto sauce, if you have a blender, put in the basil, garlic, pine nuts and olive oil together with some salt and blend until you have a smooth purée. Then transfer the purée to a bowl and stir in the grated Pecorino cheese. If you don't have a blender, use a large pestle and mortar to pound the basil, garlic and pine nuts to a paste. Slowly add the salt and cheese, then very gradually add the oil until you have obtained a smooth purée.
2. Now measure the rice into a glass measuring jug, then add about one quarter of the pesto sauce to it and stir it around to coat all the grains. Tip the mixture into a shallow saucepan or frying pan with a lid and pour the boiling stock into the jug, then pour this over the rice. Now turn on the heat and stir with a wooden spoon, adding 1 level teaspoon of salt . Then, when it begins to boil, put the lid on, turn the heat down to low and let the rice cook for exactly 20 minutes.
3. As soon as it's ready, tip all the rice into a serving bowl, then simply pour in the lemon juice, olive oil and the remaining pesto sauce. Combine the ingredients together, stirring and tossing. At this stage taste and season with salt and pepper. Finally scatter some torn basil leaves, finely chopped spring onion and then some shavings of Parmesan over the surface of the salad as a garnish. If you want to serve the salad cold, add the basil, onion and Parmesan just before serving.

This is basically a shrimp scampi dish. This dish can be used as an appetizer or as a main meal. You can serve this dish as is or as a topping on your favorite pasta.
2 lbs of raw medium shrimp - 31-40 count
2 eggs - beaten
3/4 stick of lightly salted butter
2 tablespoons olive oil
3 green onions - minced
4 tablespoons garlic - minced
3 tablespoons fresh parsely - chopped
2 teaspoons lemon pepper marinade
Peel and clean the shrimp and set aside. In a large bowl, beat the two eggs and add the shrimp. Mix to coat all the shrimp and set aside. Place a large skillet on medium high heat, add butter and oil and heat until butter has melted. Add green onions, parsely, and lemon pepper marinade. Cook and stir for about 1 minute then add garlic and cook for 1 more minute. Now add the egg coated shrimp to skillet. Set heat to high. Continue to stir and cook for 3 to 5 minutes, until the shrimp are pink and done. Remove from heat and serve immediately. Enjoy!

Serve with Angel Hair Pasta
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 tablespoons butter, cut into small pieces
1 large shallot, finely chopped
1 lemon, zested
1/4 cup dry vermouth or white wine, eyeball it
1/2 cup grape tomatoes
1/3 pound angel hair pasta, cooked to al dente
Salt and pepper
2 tablespoons chopped or snipped fresh chives
Get your pasta water going. Start the scampi sauce when you drop your pasta into boiling water to cook.
Heat a large skillet over medium high heat. Add extra-virgin olive oil and melt the butter into it. Add shallots and cook a minute or 2, stirring constantly. Add lemon zest and shrimp and heat shrimp through, another minute or two. Add vermouth or wine and tomatoes. Toss another minute to heat the tomatoes through. Add cooked pasta to the pan and toss to coat evenly in sauce and to distribute the shrimp. Season liberally with salt and pepper and serve with chives to garnish.

scampi chips and beans is the obvious basket meal option and is very nice and very fattening, try a jacket potato covered in beans, or mash and peas is nice also. i like my scampi covered in vinegar

I usually prepare rice in a rice cooker. You can walk away from it and...it doesn't burn. It's so easy to use. Having said that:
I make:
Plain rice
Seasoned rice (take 1 chicken boullion cube for every cup of water and add prior to cooking) and chopped onion
Rice with garlic and cheese: Add butter, garlic powder and shredded cheddar cheese to cooked rice
A sort of lazy girl risotto: add butter, garlic and parmesan cheese to cooked rice
I also keep frozen veggies on hand. You can buy them in bulk and nuke what you need.
I buy the rice in bulk and it takes about 35 min. to cook.

I like scampi fried, they are juicy that way. If you do rice with butter to go with it, you might enjoy it as much as I do.

Stir fry some broccali, onion and whatever other veg you like with a little chilli oil and add noodles! Serve wih some sweet chilli sauce.....Yum
