I made some Croissants at the weekend, i had a recipe which a friend had used before and they came out perfectly, mine however....well lets just say if anyone needs any bricks for extending their houses etc give me a bell!

I am using an electric conventional oven and follow the instruction on the receipe book but the cake always come out to be hard on the top. Wondering is it becos of the temperature - am using the option where heat released from top and bottom.

I guess my mom and grandma must not have been traditional about such things, because I've seen them both wash castiron pans. I've read about "seasoning" from the pan being used, and that we're not supposed to wash it away. Also read that washing can result in rust.

I know that you're supposed to wipe them out with a paper towel, which works fine if you used plenty of oil and food didn't stick or burn. But what about when food gets stuck or burned on, or say someone left it sitting till the food traces dried? How are you supposed to clean that if not by washing?

When chopping spring onions for cooking or to use in a salad, how much of the stem (i.e. above the bulb) should you use? It seems to me that if you go too high up, the taste becomes bitter. Is there a rule of thumb about this? Sounds silly (i've been cooking for decades) but I never got a satisfactory answer about this...
