A chocolate mayonnaise cake, made with mayonnaise in place of eggs and oil.
INGREDIENTS:
2 cups flour
1/2 cup cocoa
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup sugar
3/4 cup mayonnaise
1 cup water
1 teaspoon vanilla
PREPARATION:
Sift together the flour, cocoa, soda and salt. Cream together the sugar, mayonnaise, water and vanilla. Add dry ingredients to the creamed mixture; stir until well blended. Pour batter into greased and floured layer cake pans (or a 9- x 13-inch pan). Bake at 350°F. for about 25 minutes.

1/2 c butter or margarine
4 tb cocoa
3/4 c mayonaisse
Instructions

flour, cocoa, and beat 3 minutes. Add soda and water. Stir in
mayonaisse, vanilla, and salt.

Ingredients
1 box (18 ounces) chocolate cake mix
1 cup HELLMANN'S® or BEST FOODS® Real Mayonnaise
1 cup water
3 eggs
1 teaspoon ground cinnamon (optional)
Prep Time 5 minutes
Cook Time 30 minutes
1. Preheat oven to 350°F. Grease and lightly flour two 9-inch round cake pans*; set aside.
2. In large bowl, with electric mixer on low speed, beat cake mix, Hellmann's or Best Foods Real Mayonnaise, water, eggs and cinnamon 30 seconds. Beat on medium speed, scraping sides occasionally, 2 minutes. Pour into prepared pans.
3. Bake 30 minutes or until toothpick inserted in center comes out clean. On wire rack, cool 10 minutes; remove from pans and cool completely. Sprinkle, if desired, with confectioners sugar or fill and frost.
*Or, prepare cake mix as above in 13 X 9-inch baking pan and bake 40 minutes or until toothpick inserted in center comes out clean.
Pecan Coconut-Topped Cake Combine 1 cup flaked coconut, 2/3 cup firmly packed brown sugar and 1/2 cup chopped pecans, then sprinkle over cake batter in 13Ã9-inch baking dish before baking.
Decadent Chocolate Lava Cake Combine 2 packages (3.4 ounces each) instant pudding, 2 cups water, 2 cups milk and 1/3 cup sugar until blended, then pour over cake batter in 13Ã9-inch baking pan. Bake 1 hour or until toothpick inserted along edge comes out clean and serve warm.
Yellow Mayonnaise Cake Substitute 1 box (18 ounces) yellow cake mix for chocolate cake mix.
Black Forest Chocolate Cake Do not flour baking pan. Evenly spread 2 cans (21 ounces each) cherry pie filling over bottom of 13Ã9-inch baking pan, top with prepared cake batter and bake 1 hour or until toothpick inserted in center comes out clean. Cool completely, then turn upside down onto serving platter.

Chocolate Mint Cake
1/2 cup unsweetened cocoa powder
1 cup white sugar
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup water
1 cup mayonnaise
1 teaspoon vanilla extract
1 (4.5 ounce) package chocolate covered thin mints
6 tablespoons unsweetened cocoa powder
2 cups white sugar
2/3 cup milk
1/2 cup butter
1 pinch salt
1 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch cake pans.
Sift together the flour, baking soda, salt, 1 cup white sugar, and 1/2 cup cocoa. Add mayonnaise, 1 teaspoon vanilla, and water. Beat with and electric mixer on medium speed for 3 to 4 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 25 minutes. Turn oven off, remove cake layers and allow to cool for 10 minutes in pans. Invert 1 layer onto a serving plate and the other layer onto a cooling rack. Top layer on plate with enough unwrapped mints to fully cover top. Return cake to oven for 3 to 5 minutes to soften chocolate mints, then spread evenly with a spatula. Top with second cake layer and allow to cool before frosting.
To Make Fudge Frosting: Combine 6 tablespoons cocoa, 2 cups white sugar, 2/3 cup milk, 1/2 cup butter, and a pinch of salt in a saucepan over medium high heat. Stirring constantly bring mixture to a boil and reduce heat to low, allowing mixture to boil gently for 3 minutes without stirring.
Remove from heat and let cool for 3 minutes before beating in 1 teaspoon vanilla extract. Beat with an electric mixer until just barely thick enough to spread without running off the cake. Spread over top of cooled cake.
