the egg white foam won't have as much volume nor be as fluffy

the blades of a blender cut up the tiny bubbles into much smaller sizes.

Use a wire wisk for better volume.

I'd say, get it as good as you can using your blender, and then finish it up by hand, with a whisk. It actually can be done all the way by hand... possible, but totally not recommended... : / (It took four of us twenty minutes, I think, and then we bought some beaters)

Good question! I don't know that, but what I do know is that egg whites have to be airated to form peaks..(like for a meringue)..The air has to pass around the egg whites to form and the bowl your using has to be very clean or the whites won't form correctly.

If you try it, let me know..I'm anxious to hear this.

you can but the quality isn t the same.. the egg beater is indispensable!
