Here's one for ice cream, kind of fancy, but it does show that you can make ice cream with Splenda:
Homemade Vanilla-Papaya Ice Cream
Makes 8 servings
Preparation time: 15-20 minutes
Freeze: overnight
3/4 cup pomegranate juice
2 1/2 cups fat free, half and half
1/2 cup SPLENDA® No Calorie Sweetener, Granular
4 egg yolks
1 tablespoon vanilla
1/4 teaspoon salt
1 cup fresh papaya cut in chunks
SIMMER the pomegranate juice in a saucepan to reduce and thicken for 15 minutes. Remove from heat and cool before using.
HEAT the fat free half and half in a saucepan over medium heat to just before boiling. Set aside. In a separate mixing bowl place the Splenda® Granular and the egg yolks, mix at a speed #2 until pale yellow or light in color.
SLOWLY WISK a small amount of hot half and half into egg mixture. Continuously whisk to prevent eggs from scrambling. Slowly add warmed egg mixture to half and half in saucepan. Whisk constantly. Add vanilla and salt and place over low heat until it thickens. Refrigerate over night.
POUR Pour the mixture into the ice cream maker canister and run for 20 to 30 minutes. Pour ice cream into a freezer safe container and freeze for at least 4 hours before using.
In a blender at high speed, combine the vanilla ice cream and the papaya chunks.
SERVE in a crystal glass, drizzle some of the pomegranate reduction on top.
Optional: Garnish with a mint sprig and place some more of the fresh papaya on the bottom of the glass for a nice surprise. Crème the cassis can be used in place of pomegranate reduction.

On the Taste of Home site I found this other, simpler ice cream recipe, using aspartame.
Special Chocolate Ice Cream
INGREDIENTS
1 package (1.5 ounces) sugar-free instant chocolate pudding mix
6 packets aspartame sweetener (equivalent to 1/4 cup sugar)
2 tablespoons baking cocoa
4 cups fat-free evaporated milk
1 teaspoon vanilla extract
4 ounces light frozen whipped topping, thawed
SERVINGS 12
CATEGORY Low Fat
METHOD Freezer
PREP 10 min.
TOTAL 10 min.
DIRECTIONS
In a blender, combine the pudding mix, sweetener, cocoa, milk and vanilla; process on low until smooth. Fold in the whipped topping until smooth. Pour into a shallow 2-qt. freezer container. Cover and freeze for 30 minutes. Stir with a wire whisk; return to freezer until ready to serve. Yield: 12 servings.

Chocolate Ice Cream - Almost
This is an excellent substitute for real ice cream. I've slipped it past several picky eaters with success!! I found the basis on a low-carb site and tweaked it to make it more ice cream like.
1/4 cup Egg Beaters egg substitute
1/4 cup part-skim ricotta cheese
1/4 cup milk
2 tablespoons cocoa powder
5 (1 g) packets Splenda sugar substitute
6 ice cubes
1 servings
1. mix all ingredients but ice in the blender.
2. add ice and blend to a soft-serve consistency.
3. You can add sugar free coffee syrups to this as well - caramel and hazelnut are great with chocolate.
4. You can also use frozen raspberries, sugar free raspberry syrup and a bit less ice instead of chocolate!

Mock Vanilla Ice Cream 1 Cup heavy cream ½ cup Splenda 11/2 teaspoons no sugar added vanilla extract 2 tablespoons whole milk ricotta cheese With an electric mixer on high, whip the heavy cream in a bowl just until frothy. Add in the sugar substitute, vanilla, and ricotta cheese, and continue to whip on high until peaks form. Be careful not to over-whip, or cream will break. If you have the 800 number for Splenda, (look on the package) call them. They are very helpful. They may even send you a comparison chart for it, as compared to sugar.
